Pizza Night!

Pizza with the Works, Borzillo style.
Those Chorizo Meatballs from the other night and sausage, peppers and onions from a meal that will appear later this week. The dough was Jim Lahey's recipe, of course. Baked at 450 degrees in the convection oven for 25 minutes. "Delicious!"

The small pie was spinach and olive. Yeah that was darn good too!

Farro Soup With Chorizo

Tonight we had the other half of the Chorizo sausage. Farro Soup With Chorizo. We have had this soup before and loved it. The recipe is from RealSimple.com. We have enough for tomorrow night's dinner too. Really looking forward to that already!

Ingredients-
1 tablespoon olive oil
8ounces Spanish chorizo (cured sausage) or kielbasa, sliced
2 carrots, chopped
1 onion, chopped
kosher salt and black pepper
1tablespoon tomato paste
4cups low-sodium chicken broth
1/2cup farro
1 15-ounce can chickpeas
1 bunch Swiss chard, stems removed and leaves roughly chopped

Method-
Heat the oil in a Dutch oven over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, 1 to 2 minutes. Transfer to a plate.

Add the carrots, onion, ¼ teaspoon salt, and ¼ teaspoon pepper to the pot. Cook, stirring, until the vegetables begin to soften, 4 to 5 minutes.

Add the tomato paste and cook, stirring, until it is slightly darkened, 1 to 2 minutes.

Add the broth, farro, and 2 cups water and bring to a boil. Reduce heat to medium and simmer until the farro is just tender, about 15 minutes.

Stir in the chickpeas, chard, sausage, ½ teaspoon salt, and ½ teaspoon pepper. Simmer until the chard is tender, 3 to 5 minutes.

As a side I had a loaf of Pizza di Scarola in the freezer. Oh this is heaven!!!

Fried Chickpeas, Chorizo and Spinach

It has been a while since we have had this Mark Bittman classic recipe. Traffic was not too bad for a Thursday night and I was able to make this when I got home. I did cut up the Chorizo before leaving for work this morning.

I heated some olive oil in a saute pan and added the rinsed and drained Chickpeas. I fried them up a bit before adding the sausage. The Chorizo was sauteed with the Chickpeas for about 5 minutes. Then I added some thyme and about 2 cups of fresh chopped spinach. I also added some leftover roasted peppers. Sauteed all that until the spinach wilted and served with Italian bread.

Lentils with Chorizo and Kale

But we had sausage last night! This recipe is a variation on a Food & Wine recipe, Lentils with Smoked Sausage and Carrots. I had the carrots but I also had kale.

We both of enjoyed this. The kale was not overpowering and the Chorizo added almost enough spice to the dish. I also added a Parmesan rind to the pot, couldn't hurt!

Lentils with Chorizo and Kale

Ingredients -
2 tablespoons cooking oil
1 onion, chopped
2 carrots, halved lengthwise and cut crosswise into 3/4-inch pieces
1 pound lentils (about 2 1/3 cups)
1 quart water
1 1/4 teaspoons salt
1 bay leaf
1 piece of Parmesan rind
1 teaspoon dried thyme
1 pound Chorizo cut diagonally into 3/4-inch slices
1 head of Kale, rinsed and removed from the stem and roughly cut
3 tablespoons chopped fresh parsley

Method -
In a large saucepan, heat the oil over moderately low heat. Add the onion and carrots. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.

Add the lentils, water, salt, bay leaf, Parmesan rind and thyme. Bring to a boil, reduce the heat, and simmer, partially covered, until the lentils are almost tender, about 20 to 30 minutes. Discard the bay leaf.

Stir in the Chorizo, kale and parsley. Cook until the lentils are just tender but not falling apart and the Chorizo is warm, about 15 minutes longer.

French Onion Grilled Cheese

Yes you read that correctly! I found this recipe on TasteSpotting. Caramelized onions. Actually Wine Braised Onions. It tasted like a bowl of soup! So comforting.

Farro Soup With Chorizo

First let me say, "Happy Anniversary Stephen and Ann!"
Farro Soup with Chorizo. This was from Real Simple. I do love that site for easy but very good recipes. Today it was stormy out so the soup hit the spot. And best part is there was enough for another meal so we have soup in the freezer!

Pork Meatballs

What? Pork Meatballs! Oh wait... first HAPPY BIRTHDAY HEIDI! Okay back to dinner. I found this in a Tasting Table newsletter. Something completely different. Who would have thought to have meatballs without sauce! We had it with the grainy mustard the recipe recommends. Loved this. The spiciness of the paprika and the crushed red pepper. Really nice.

Chicken Pot Pie

Happy Anniversary Carlo and Tara!
And it is the time of year that we can start eating meals like Chicken Pot Pie. First off I cheated. I was rushed and I had to make a quick Pot Pie. I felt bad but what could I do? Yes I used Cream of Potato soup. Sigh. I did not have time to make the roux and the thought of the pans was something I was not ready to jump into. The result was a damn good pot pie. LOL! Of course the crust was perfect, that is the best part. But the next pot pie will be truly homemade... I promise.

Warm Spinach Salad with Grilled Chorizo

Tonight's recipe is from RealSimple.com. Warm Spinach Salad with Grilled Sausage. I did not have Italian sausage (!!) but I had Chorizo Sausage. And instead of plum tomatoes I used Campari tomatoes. The dressing was delicious.
