Hot Dogs and Pasta


The last time I made this recipe was in 2016. Next time will be sooner. The pasta was made with Parmesan cheese folded in before the last roll on the pasta machine. Why don't I do that more often???

I used hot dogs and pancetta. Why not! No complaints from the other side of the table.

The Pasta recipe
Ingredients-
3 cups flour
4 eggs
1 tbsp kosher salt
1 tbsp olive oil

Method-
Place the flour, eggs, and salt in a food processor. Pulse to combine. With the machine running, gradually add the oil then 1/3 to 1/2 cup water until the mixture forms a dough (the dough should stick together if pinched between your fingers). If necessary, add additional water, 1 teaspoon at a time if the dough is too dry.

Place the dough on a lightly floured surface. Gather the dough into a ball and knead until the dough is smooth 5 to 8 minutes. Cover with plastic wrap and refrigerate for 20 minutes.


When you are rolling out the pasta dough and you get to the second to last setting and sprinkled the pasta with Parmesan cheese and then folded it in thirds and put it back through the pasta machine, putting the setting back 2 places. (You should be at setting 6 and that is when you add the cheese. After the dough is folded over you put the machine back to setting 5 and proceed.). And then continued rolling until you got to the lowest setting. 

Hot Dogs and Pasta
Ingredients-
4 hot dogs, cut into 1/2-inch pieces
8-ounce broad egg noodles
3 tablespoons unsalted butter, softened
1 tablespoon fresh parsley
1 tablespoon grated Parmesan cheese

Method-
Bring a large pot of lightly salted water to a boil; add the pasta and cook until al dente, about 5 minutes; drain.
Melt 1 tablespoon butter in a skillet. Cook the hot dog pieces in the butter until browned. Add the hot dogs to the drained noodles with 2 tablespoons butter, parsley, and Parmesan cheese; stir until butter is melted and the hot dogs are coated.

Fried Dinner!


This recipe is from a post from 2018. The original recipe was from Bon Appetit. I added a few ingredients this time. We had no leftovers. And it took less then 30 minutes and there were very few dishes in the sink. Winner, Winner!


To a saute pan with heated olive oil add the thinly sliced potatoes. clear a space in the center of the pan ad place sliced Italian bread. I did 2 at a time while the potatoes were frying.  Cook until both sides of the bread are browned. Remove the bread to a serving dish. At this point I added chopped onion and shallots. I sauteed them for about 2 minutes adding some chopped Swiss Chard, obviously rinsed and de-stemmed. Cook that down until it wilts. I added about a 1/4 cup of water and cover the pan for a few minutes. Uncover the pan and add a small drained can of chickpeas and saute for a couple of minutes. Uncover the pan and add one or two sliced hot dogs. Cook until the hot dogs have crispy edges. Season with salt, pepper, oregano. Put this mixture on top of the bread on the serving dish. Add a bit of butter to the pan and fry a couple of eggs. Place the eggs on top of the chard mixture and dig in.

Did I mention there are no leftovers! I think I saw someone eating Swiss Chard...

My Favorite Hot Dog Recipe


The buns are buttered and seared. 
The hot dogs are seared and then topped with cheese. 
What is not to love about this dinner. 
Oh okay, it is not the healthiest meal we have had but darn it was good.

There's a New Corn in Town

Last week Chris came home with produce from another farm stand in town. Cole's Farm Stand. Sorry Jake but the corn is amazing! Tonight we had the white corn. Nice sized kernels.  So tender and each kernel burst with flavor.

Speaking of bursting with flavor, we also tried a new hot dog tonight. Ferraro's Hot Dogs. Yeah,  I went to Ferraro's Market at lunch. Such a nice store! My sister, Lenore,  knew someone who said that Ferraro's Hot Dogs were better than Hummel's. Now in this neck of the woods that is a pretty bold statement. Bold and true. No after taste or weird hot dog taste. They had a nice snap. I even had 2 hot dogs!

Spiral Cut Hot Dogs

This morning I was reading Chow and came upon this article, Why You Should Spiral-Cut Your Hot Dog For Grilling. I was planning on Hot Dogs for dinner so why not give it a try. They were interesting. And I would try them again.

Side dish was a Lentil and Feta Salad. I have been making this recipe since we got married and not sure where I found it. Oops. Forgot to take a photo of it!

The Grill is Officially Open! Hot Dog!

It is the first day of summer so let's have hot dogs... on the grill of course. The aroma was fantastic. The only thing the kitchen was used for was to heat up the Pasta Pie I made on Sunday!
