Steak and Onion and Cheese Paninis

Tonight's dinner was easy to prepare, but certainly not lacking in flavor. Onions sauteed in butter and a little olive oil. Then the steaks were cooked in a knob of butter. I spread a little horseradish dressing on the Italian bread and piled on the steak, onions and some cheddar and American cheese. On to the Panini press. The side dish was Roasted Butternut Squash. A perfect dinner for a snowy Saturday night. Yep, another snowy night.

Chicken and Fried Pepper Paninis

When I was little there was a cartoon in the daily paper called Priscilla's Pop. Every day Priscilla's pop had a Mashed Potato Sandwich for lunch. My Dad had a Fried Pepper Sandwich on Italian Bread everyday for lunch. So tonight when we were preparing our Grilled Chicken Paninis I grabbed a jar of Fried Peppers out of the fridge. I will have to tell my Dad what we had for dinner tomorrow when I visit. I am sure he will say that we did not need to add the Chicken!

Chicken, Zucchini and Roasted Pepper Panini

First of all the bread was great!. I picked it up at Stop and Shop. Premium Multigrain Sandwich Bread. I grilled the zucchini slices and then the chicken breast, which was cut into cutlets, on the Panini grill. I then built the sandwiches. Zucchini, Chicken, Roasted Peppers, some Goat Cheese and American Cheese. I had a couple slices of Provolone so I added that too! I buttered the tops of the bread and let the Panini Grill do the rest. We added mustard after the sandwiches came off the press. Also picked up some Greek Pasta Salad at the deli counter.

And we had a new visitor to our bird feeder...

Grilled Chicken and Zucchini Panini

I love our panini grill. I had my eye on the grill that we purchased for some time. On Black Friday I got an email from William Sonoma and the grill was on sale! So we got an early Christmas gift.
This is a photo of the ingredients before the sandwich went on the grill. Grilled chicken, grilled zucchini and yellow squash all seasoned with thyme, salt and pepper. Scamorza cheese, black olive spread, mayo and arugula.

The First Panini

Yes we have a panini grill. I made a frittatta, of course... The frittatta had zucchini, yellow squash, sweet potatoes, onions and prosciutto. We each made our own paninis.

I had Scamorza cheese on mine. It was good.
