Happy 4th of July
Burgers and Potato Salad. First burgers on the grill for this year. Delicious.
The Potato Salad was really pulled together as I stood in front of the refrigerator. I boiled red-skinned potatoes along with an egg. Potato Salad needs a hard-boiled egg. After the potatoes were cooked and drained I tossed them with olive oil and champagne vinegar. I added diced carrots, celery, scallions, the hard-boiled egg, and parsley. Salt and pepper and a knob of mayonnaise. Just enough to coat all the ingredients. The taste was, and this is quote, "This is not bad."

Burgers and Salad with Our New Salad Dressing
Our house burger recipe. Why would I mess with perfection? Sorry but the burger is that good!
Wondering what the orange is under the burger? Well I got my newest post from The Proud Italian blog a while ago and saw this and HAD to try it. Yeah this was good! Feta and Red Pepper Dip. Perfect on a burger!
The salad had a lot going on in it. But we stumbled upon what will be our House Dressing from this day forward. This is my husband's recipe. 1/2 a cup of olive oil, the juice of 1/2 a lemon, 2 tbsp. Dijon Mustard, 1 tbsp. Balsamic Vinegar and salt and pepper to taste. Delicious!

Burgers and Tricolor Pepper Relish
Burgers and corn were grilled by Chris. I was taking care of the condiments. So I made relish! This relish recipe can be found in the August issue of Bon Appetit. Tricolor Pepper Relish. It is much better than store bought and really easy to make.
