Chicken Parmesan



A damn good dinner if I do say so myself. 


I had taken the prepared Chicken Cutlets out of the freezer this morning along with a small container of "The Sauce". The dish was assembled and heated in the oven for about 25 minutes at 375˚. The chicken was perfectly moist. The breading was crispy and the sauce, well that is always spot on.


I also had some zucchini fritters in the freezer. They were the perfect side dish. The recipe is an oldie from the Martha Steward Magazine. I think I first saw it in the '90s. Luckily I found it online.

Chicken Parmesan

Yesterday I made "those chicken cutlets" and I made and extra batch. With the extra batch I did not use the lemon dressing. Instead I topped the baked cutlets with "that sauce" along with some fresh mozzarella. Wow! Best Chicken Parmesan!!!! Even the photo looks delicious.

Only to make my life easier, here is the recipe for those chicken cutlets. If you try this recipe you have to watch the video of the grandson cooking with his Nonna. It is priceless and so dear.

These are my notes from the video. You will need to watch the video to get the whole recipe.

1.   Mix eggs with Parmesan Cheese
2.   Mix bread crumbs, flour, pepper, Parmesan Cheese and parsley
3.   Coat baking pan with oil
4.   Toss chicken in a bowl with the egg/cheese
5.   Coat chicken with bread crumb mixture
6.   Place chicken in pan
7 .  Drizzle oil on top
8.   Heat oven to 350 and then raise temp to 450.
9.   Place tray in middle of oven
10. Mix lemon juice, parsley, pepper and oregano
11. Flip cutlets when they look like they do in the video (!!!)
12. Dip baked cutlets in lemon bath.

Chicken Parmesan

This weekend I went to Robert's with my 20% off meat coupon. I love this sale and I think it is one of my husband's favorites! We have a pretty stocked freezer. I did not go overboard. I stuck to the basics. I did buy 2 pounds of chicken cutlets, I should have gotten 3 pounds, but I was trying to be frugal. On Sunday I made my Mom's Chicken Cutlets. I love having these in the freezer.

Tonight I topped the cutlets with some of that sauce from Sunday night's pizza along with some Mozzarella and Parmesan. Popped in the oven for about 25 minutes. Oh, this was so delicious. They tasted just like what I remember my Mom's tasting like.

Black Bean Soup and Chicken Parmesan Subs

Black Bean Soup. This is a meal that took less then a half hour to make. Recipes like this make me wonder why everyone can not put a home cooked meal on the table at night. I will get off my soap box now.... What no photo! Sigh. Well trust me it was delicious!

And about the Chicken Parmesan Subs. I had those chicken cutlets in the freezer and some homemade marinara sauce so presto we have Chicken Parmesan. We put the cutlets on a small sub rolls.
Another winner!

Chicken Parmesan

Last day of a vacation break. I picked up some kosher chicken. It was nice and pink. I cut it into scallopines and then dipped them in an egg wash. I mixed panko breadcrumbs with oregano, parsley, thyme, crushed red pepper, salt, pepper and Parmesan cheese. The chicken was dredged in this after the egg wash. Topped each piece with a little tomato sauce and mozzarella cheese. Baked at 400 degrees for 25 minutes. I was amazed at how good this was. Chris loved it.

 For sides I made brown rice and some sauteed zucchini.
