Another oldie but a goodie! The frittata consisted of Peppers, Zucchini,
Shallots, Eggs, Bacon and Provolone Cheese. Add some toasted Italian
Bread and you are done.

Vegetable Frittatta Sandwiches with Bacon
I thought I would do a vegetable frittatta. I did make a frittatta with onion, zucchini and red pepper. But there was bacon in the fridge so I added it to the sandwiches. We used the Panini press to grill them. Just a delicious meal.
I had today off and it was the perfect day to have breakfast on the deck. Toasted Italian Bread with Nutella. I can not think of anything better!

Fettuccini Primavera
Wow what a week. I needed something for dinner that was fast and did not require a trip to the store. I opened the fridge and saw leeks, zucchini, yellow squash, spinach, tomato and scallions. The light bulb went off - Fettuccini Primavera. Perfect! I used this recipe for the sauce. The veggies were just sauteed in olive oil, a bit of butter, salt, pepper, thyme and parsley. So simple.
We had lot leftovers so... a frittatta! I might bring it to my dad's tomorrow for lunch.

Friday Night Frittatta
Well let me start by saying I usually prepare my frittattas on the weekend for a midweek meal. I worked from home today so not having to deal with traffic afforded me the luxury of preparing a frittatta for dinner tonight!
Where to start... I had some peppers and zucchini in the fridge that I wanted to use up.
I also added onion. To the eggs I added a little ricotta. The seasonings were the usual - salt, pepper, crushed red pepper and Parmesan cheese. The frittatta came out perfect.
But I could not stop there. I bought a loaf of very expensive bread today. A multi-grain loaf of "Panini" bread. It was quite good but seriously it was just sliced thicker than the usual loaf.
So after making this purchase I had to make Paninis.
Really glad I bought that bread. The sandwiches were perfect. But next time it will be with homemade bread!

Potato, Leek and Prosciutto Frittatta
Potato and Prosciutto Frittatta and a couple of other things added. Potato, Zucchini, Red Pepper and Leeks to be exact. I added some ricotta to the eggs and picked some parsley from my herb garden (my very small herb garden).

Catching Up...
Wow what a week. I did not have time to do any posts this week. So here we have our first ever Week End Wrap Up! A couple of the meals were made a couple of weeks ago and put in the freezer. Thank God for that freezer!
Tuesday...
Zucchini, Yellow Squash, Italian Green Pepper and Prosciutto Frittatta on Pita Bread.
The prosciutto was the star of the meal. When I was at the grocery store this week I noticed a sign at the deli counter advertising Prosciutto ends for $2.99 a pound. I got the last one. Yes it was my impulse buy. I cut it into a couple of pieces and froze some. I added a bit to the frittatta. Delicious!
Wednesday...
Lasagna.
No Boil Noodles, frozen meatballs and homemade sauce. Perfect end to a crazy day.

Friday...
Quarttro's! Started with a Vodka Gimlet (it was a very long week), Bruschetta, Fried Calamari. For dinner I had Fettuccini Carbonara and Chris had Veal Matesse. As always it was an amazing meal.
And a word about lunch...
Hearty Farro Soup. I found this recipe on Cucina Panzano. I made a pot of it and it was my lunch all week. I added lentils in place of the pinto beans. I looked forward to lunch every day. This is a highly recommended recipe.
