Today I went out with my sister. I wanted something that would be ready for dinner when I got home. Cue the slow cooker. The recipe is from Pure Wow. I did make a couple of edits to the recipe.
This is the version of the recipe that I made. I cut the recipe in half and left out the mushrooms and garlic.
It was quite good. We both went back for seconds.
Slow-Cooker Creamy Chicken and Wild Rice Soup
Ingredients-
1/2 pound boneless, skinless chicken breast, diced
1/2 sweet onion, diced
2 carrots, peeled and sliced into rounds
1 stalks celery, sliced
1/2 cup wild rice
1 bay leaf
3 cups chicken broth
Kosher salt and freshly ground black pepper
1/4 cup heavy cream
Method-
Place the chicken breast, onion, carrot, celery, wild rice, bay leaf, and chicken broth in the bowl of a slow cooker.
Turn the slow cooker on low, and cook until the chicken and rice are tender, 6½ to 7 hours.
Season the soup with salt and pepper and stir in the heavy cream.
Cook until heated through, 15 to 20 minutes.
