Shellaroni!

Okay for anyone who went to St. Mary's High School I believe Shellaroni was served on Wednesday for lunch... or was it Thursday. No matter, it was my favorite school lunch. I use to beg my mom to let me not bring lunch on Shellaroni day. Tonight when I went to grab a bag of pasta from the pantry I  saw the shells and the memories came back. I think the meat sauce I used was probably better then whatever was served to us in the cafeteria.

And here is the recipe from my Mom's Meat Sauce -

Ingredients  -
onion, chopped
olive oil

ground beef,
sausage, ribs or any meat you like
crushed tomatoes, canned

tomato paste

parsley

oregano

salt

pepper


Method - 

Heat oil and saute onion until translucent. Add the meats. Cook until meat begins to brown. Drain off any fat from the pan. Add the crushed tomatoes. Cover and simmer for about 2 hours, depending on the type of meat that is used. If the sauce is thin add tomato paste. Season with parsley, oregano, salt and pepper.

I usually use 4 cans of crushed tomatoes and end up with 4 to 5 freezer bags of sauce.
