Grilled Rib-Eye Steaks with Bobby Flay's Dry Rub

"Why have we not used a dry rub before?" "Because you never wanted to."

Well let's just say that we have been missing out on amazing flavors. I like my steak grilled without any thing on it. If I am going to eat a steak I want to taste the steak.
That was then and this is now. This all started with an article in the paper this week about Mario Batali and his Grilled Rib-Eye recipe. He used a rub consisting of mushrooms. One of us is not a mushroom fan. But the article peaked our interest. My job was to find a rub that would work. Easy to do. I think the Bobby Flay recipe was maybe the third or fourth recipe I looked at. And happily I had all the spices it required in the house.
Let's talk about the flavor. Simply put - this was the most delicious steak Chris has ever grilled. The rub gave one side a nice crisp sear and the flavors were a perfect blend. I am tempted to try another rub next time but might just stick with this recipe.

For a side dish I made Sugar Snap Salad. The recipe is from Bon Appetit. Only change I made was not to use sumac(?). I have never seen it at the store. The recipe was very good without it. Click here to try the recipe.

Oh and to drink we had a very nice bottle of Francis Coppola Zinfandel 2011. Perfect choice!

The Frittatta Sandwich

Two perfect dishes in one week! The Pasta Pie, making use of leftover pasta and now the Frittatta making use of just about everything. Leftovers, not a problem. Make a frittatta. And then bring it to the next level by making sandwiches. No worries...

Burgers and Grilled Corn? It Must Be Summer!

Well for tonight it is summer. Tomorrow bring more rain.  But these are our first burgers on the grill this year! The first burgers always taste like summer. And the corn, well I thought it was too early but it was like butter. Best part of these meals is the clean up. Almost nothing to wash.

The salad was Farro with Roasted Beets, English Cucumber, Carrots, Celery and Ricotta Salata. The dressing was simply olive oil and lemon juice.

And Happy Birthday to my brother Stephen! This is a photo of Stephen and my sister, Lenore, taken way before I was on the scene! Cute bow tie!

Sausage and Barley Stuffed Peppers

This was suppose to be a completely different dish. It was suppose to be Spinach and Sausage Stuffed Peppers. I bought the sausage but did not get the spinach. Not a problem as I have made stuffed peppers quite often. But I did not want to use rice so I tried pearl barley. Excellent choice. The nutty texture of the barley was perfect. It seemed healthier too. The meat was seasoned with oregano, thyme, salt and pepper. A little parmesan cheese. The red peppers were on sale, thankfully! The sweetness of the peppers, the spice of the sausage and the barley made this the kind of meal that you want to go back for seconds.

And the sauce? I was going to use a Marinara but the I remembered last night's leftovers. The sauce is actually better on the second night!

Linguine with Squash Noodles and Pine Nuts

Before we get to dinner let's start with a bit of baking that took place last night. I had a couple of bananas that had to be used. I was going to make a banana bread but realized that I had blueberries too. I googled Blueberry Banana Scones. I love scones. I found this recipe on Word of Deliciousness. Drats, the recipe called for Sour Cream. It was 9:30 at night and I was not going to the store. But I did have Cream Cheese. Blueberries, Bananas and Cream Cheese. It was a no brainer. They came out so good!

Blueberry Banana Scones from Word of Deliciousness with my adaption.

Ingredients -
2 1/4 cups flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup butter
1/2 cup cream cheese
1 cup blueberries
1/3 cup mashed banana

Method -
Stir together flour, sugar, baking powder, baking soda, and salt. Cut in the butter until mixture resembles fine crumbs. Add cream cheese and banana, stir until moist. Gently fold in the blueberries.
On a lightly floured surface form the dough into a 7 inch circle. Cut the circle into 8 wedges using a pizza cutter or a sharp knife. Place on lightly greased baking pan and bake in a 350 degree oven for about 25 minutes or until scones are lightly browned.

Now onto dinner. This is my new favorite summer pasta dinner. Have to many zucchini this summer? Try this recipe. Perfect flavors. The lemon and zucchini are match made in heaven. I could only image what it would taste like with a homemade pasta! And the leftovers... well we will wait until tomorrow night to discuss that!

Linguine with Squash Noodles and Pine Nuts, from Chow

Ingredients -
1/3 cup pine nuts
2 tablespoons unsalted butter
2 tablespoons olive oil
4 medium shallots, very thinly sliced
1 medium lemon, zest finely grated and juice reserved separately
3 medium zucchini
2 medium yellow squash or gold zucchini
12 ounces linguine
1/2 cup chopped assorted fresh herbs (use a mixture of chives, parsley, chervil, tarragon, and basil), plus more for garnish
2 1/2 ounces ricotta salata cheese, finely shredded or grated (about 1 cup), plus extra shavings for garnish

Method -
Bring a large pot of heavily salted water to a boil. Heat a small frying pan over medium heat, add pine nuts, and toast, shaking the pan occasionally, until golden, about 3 minutes. Remove nuts from the pan and set aside.

Heat butter and oil in a medium saucepan over medium heat. When butter foams, add shallots and a pinch of salt and cook, stirring occasionally, until shallots are soft and translucent, about 7 minutes. Stir in toasted pine nuts and lemon zest, season with salt and freshly ground black pepper, and remove from heat.

Trim ends off of zucchini and yellow squash. Using a julienne peeler or a mandoline, cut the skin and first layer of flesh from each squash in long ribbons, or “noodles.” (You should have about 3 cups.) Alternatively, you can use a knife to slice the skin and first layer of flesh off each side of the squash (creating four 1/8-inch-thick slices), and then julienne each piece into 1/8-inch-wide ribbons. Reserve remaining squash for another use.

Cook linguine according to the package directions. When about 1 minute of cooking time remains, add squash noodles to the pot. When linguine is cooked and squash is tender, drain well in a colander and then return to the empty pot.

Add shallot mixture, lemon juice, herbs, and 1/2 of the grated cheese. Season with salt and lots of freshly ground pepper and toss well. Transfer pasta to a serving platter and garnish with more fresh herbs and cheese shavings. Pass extra cheese on the side.

Chicken Caprese Salad with Baby Kale and Beans

Last night when I asked Chris what he wanted for dinner tonight he said, "Something light." I had the recipe for the Chicken Caprese Salad, from Food & Wine, in my Pepperplate recipes and it seemed to fit the bill. But we are in the middle or tail end of Tropical Storm Andrea so grilling was not an option. But wait I have the panini press! Perfect! But the dish still needed something else. It needed a bed of some kind. I had that Baby Kale in the fridge just waiting to be used. I sauteed some shallots and added the kale, salt, pepper and crushed red pepper. I sauteed it until the kale wilted. I added a half of a can of cannelini beans. I put the Chicken Salad on the bed of kale.

This was very good. Every component was a stand out. The chicken was so moist. It marinated in a dressing of olive oil, vinegar, salt, pepper and oregano. And the kale had a nice bite to it.

And being my mother's daughter, always thinking there will not be enough, I ordered a stuffed bread from Bradley and Wall. Eggplant and Bacon stuffed bread. Wow. Amazing. We had to try really hard not to eat the whole loaf... but no one is around now. No one would notice if a little piece was cut...

Seeing it is Friday, thank God, let's chill out like Archie does all the time.

Hope everyone has a wonderful and dry weekend!

Golden Semolina Quinoa Spinach Cakes and Leon Salad

Not bad for a Monday! Alright I did make the Quinoa Spinach Cakes and prepped the salad fixings yesterday but this was such a good dinner for the start of the week.

The Golden Semolina Quinoa Spinach Cakes recipe can be found on the Food and Wine site. They were a little time consuming and I was hesitant to fry them but we don't eat that much fried food. Delicious. The frying was a plus. I was not sure about the recipe as I was making it but I was quite pleasantly surprised.
Now the salad was also a hit. The Leon Salad. A take on a salad from La Scala in LA. The recipe can be found on the Saveur site. The marinated salami and provolone, well I should not even have to tell you. What a great addition to the salad. I added a green I had not used, nor seen in the store before yesterday - Baby Kale! Who knew? The recipe called for mint and I was not happy with the selection at the store so I grabbed the Baby Kale. I liked the texture and the taste paired with the romaine, radicchio and parsley.

And some other bits of news...
Check it out there are some amazing pasta dishes.

And I have planted this summer's deck garden.
I got the last white eggplant at the garden center!
I am sure my Dad is smiling!

Pasta with Prosciutto and Spinach

Busy weekend so I will keep this post short. Dinner was really good. This was a nice light pasta dish, even though it used tortellini. I think any pasta would be fine with sauce. But what is up with the price of pine nuts! I won't even tell you what I paid. Want to try the recipe? It's from Cooking Light. Less then 300 calories a serving! Click here.
