Chicken, Caramelized Onions and Leeks with Ravioli

Let me start by saying this was delicious! I came up with this recipe as I was standing in front of the freezer this morning.

I took out a single chicken breast from the freezer along with a container of caramelized onions & leeks that I left over from when I made the Kale and Butternut Squash Pie. I do love my freezer.

I cut the Chicken breast into small medallions and sauteed them in olive oil and butter. Then I added salt, pepper, fresh parsley, sage and rosemary and also dried thyme. Kind of reminds me of a song... Sorry could not resist.

After the chicken was cooked through I added the onions and leeks, about 1/2 cup of white wine and let that cook down a bit and then added a 1/4 cup of heavy cream. I finished it by adding the cooked ravioli.
