I really like escarole. I like pizza, it's a bread thing. So when I saw the recipe for
Pizza Di Scarola (Escarole Pie) on the Memorie di Angelina site I was very excited. I made the dough, using
Jim Lahey's amazing recipe. Then Chris saw the recipe and asked why there was no meat in it. Not a problem. Sausage was the perfect addition. And my mom never used raisins so I left them out. But I added onion when I was sauteing the sausage. And I also added the cannelini beans. Seemed to just be an automatic reaction when I was sauteing the escarole! This was hit!
