Beef and Barley Stuffed Peppers

Delicious and pretty darn easy. I had the pre-cooked barley in the freezer. I sauteed chopped onion in a little olive oil and than added the ground beef. Seasoned the pan with salt, pepper, crushed red pepper and oregano. Some fresh chopped parsley on top. Mixed in some Parmesan cheese and filled two hollowed out red peppers. Placed the peppers in a baking pan and put a little water in the bottom. Topped with some Marinara sauce and covered the dish with foil and into the oven for about 35 minutes. Yum!
