Pomodori Al Riso

Pomodori Al Riso, Tomatoes Stuffed with Rice, from Rachel Eats is a fantastic summer dinner. I purchased the tomatoes at Jake's Farm Stand. They were perfectly ripe. I love the idea of soaking the rice with the tomato meat and juices for 45 minutes. And of course roasted potatoes were my favorite.

I also made a big salad, actually the salad will be my lunch for a few days too!
