Grilled Meatballs and Rice Salad

 
Before we get to tonight's dinner, today was Open House Day in Connecticut.  My sister and I decided to do the Monuments Man Walking Tour. It focused on the work of Deane Keller, who was one of WWII's Monument Men. It was very interesting presentation. And of course we had to go to lunch so we tried Caseus Fromagerie & Bistro. And it is located in the spot where Nancy Lee's was located. (That is where I met Chris!)
The menu had so many things I wanted to try but I opted for the Grilled Cheese. I only ate half, which was 1/4 pound of cheese! Oh it was sooooo good!

Now on to dinner. Grilled Meatballs. Had these in the freezer. Used a simple recipe of soaking Italian bread in milk and then squeezing the bread. Adding the bread to the meat with some parsley, salt, pepper and cheese. Chris grilled them using our grill basket.
The Rice Salad was something I threw together from things in the fridge. Cooked and chilled Aborio Rice mixed with diced celery, carrots and parsley. The dressing was olive oil and lemon juice, salt and pepper. I had a little fresh mozzarella and some feta cheese that were added to the bowl. Delicious!
