Hello Old Friend


The first time I made this recipe was in 2009. It was my 5th blog post and the first time I posted a photo of dinner.

The recipe was from Jamie Oliver's Cooking at Home. Back in 2009 I was hesitant to put recipes from cookbooks on the blog. Copyright infringement was actually a thing back then. Someday I will share America's Test Kitchen story.


Here is the recipe -

Ingredients-
1 lb ripe cherry tomatoes, mixed colors if you can find them
2 sprigs of fresh thyme
2 sprigs of fresh rosemary
2 sprigs fresh bay
1 tablespoon dried oregano
1 lb sweet Italian sausages
extra virgin olive oil
balsamic vinegar

Method -
Preheat the oven to 375°F.

In a roasting tray, large enough to take the tomatoes in one snug-fitting layer put in all your tomatoes, the herb sprigs, oregano, and sausages. Drizzle well with extra virgin olive oil and balsamic vinegar and season with salt and pepper.

Toss together, then make sure the sausages are on top and pop the tray into the oven for half an hour. After this time, give it a shake and turn the sausages over. Put back into the oven for 15 to 30 minutes, depending on how golden and sticky you like your sausages.

Check the seasoning and serve either with a loaf of bread (great for mopping up the sauce!) or with mashed potato, rice, or polenta.
