Chicken with Bacon and Leeks
You all the story that Chris and I met when we both worked at a restaurant called Nancy Lee's. This dish was a regular item on the menu. Nancy would have been pleased with the way this turned out tonight.
I dredged the chicken breast in flour and then added them to a saute pan that had been heated up with butter and olive oil. When the chicken was done on the one side, about 5 minutes, I flipped the chicken and nestled in the leeks and bacon. About another 4 minutes and I put the pan in a 375˚ oven to cook through.
Meanwhile, I made a sauce using butter, cream cheese, and milk. I seasoned it with some cayenne pepper to give it a little kick. Here is the link to the recipe, and of course I did not use the recommended garlic.
Pretty good for a Monday night. Just too many dishes!

Mark Bittman at Ikea
Yeah! Second row to see Mark Bittman. An autographed copy of his book How to Cook Everything The Basics. Interesting talk. And ran into Emily Tu Bumacto of Emily's Kitchen there!
Mark Bittman is my favorite food writer. I love the tone of his pieces. And his cookbooks, well let's just say if everyone tried a recipe from one of his How to Cook Everything series, including the iPhone app, I do believe people would see how damn easy it is to put a meal on the table. Just a few ingredients and the result is an amazing dish. Screw processed foods. Sorry for being so rude about it but really making a nutritious home cooked meal, where you know all the ingredients, is just not that hard to do.
Okay off the soap box and on to dinner.
Tonight was one of our favorites. Chicken with Bacon and Leeks. I am sure I have told the story that when I met Chris we were working at a place called Nancy Lee's and this dish was on her menu. It is our comfort food. The flavors bring back a lot of memories of that little restaurant.
For a side dish, along with Aborio rice, I made something different. Fennel, orange and olive salad. I found this on Rachel Eats. Visit this blog. Trust me, lots to read! Now regular readers (are there any out there?) will know that I like fennel. Chris did like the orange and olive combination.
Tomorrow is St. Patrick's Day. When I was leaving the grocery store today a clerk said, "Happy St. Patrick's Day" to me. I said thank you but wondered if on Tuesday they will be saying Happy St. Joseph's Day? Seriously a Zeppole is a much better thing to look forward to compared to Corn Beef and Cabbage. Just sayin'.

Pasta Rags with Chicken, Bacon and Leeks
When Chris walked in the door tonight he said whatever I was cooking smelled good outside. Okay I don't like to brag but holy cow this was good.
This meal came together the other day when a friend at work gave me some leeks from her CSA. Thank you Wendy! I love leeks. I usually make Chicken with Leeks and Bacon. I did not have alot of chicken so I decided to add pasta to the meal.
I cooking up some chopped bacon. I removed the bacon from the pan and wiped it out. Then I sauteed some leeks in olive oil and a knob of butter. I cut the chicken breasts into cubes and dredged the cubes in flour and thyme and added them to the saute pan. After the chicken began to brown I added some white wine and covered the pan until it was cooked through.
Meanwhile I am making the pasta. I use the recipe from Tide and Thyme. The pasta was perfect! I made only 1/2 into "rags" and cut the other half into fettuccine noodles and popped them in the freezer.
I boiled the pasta rags and when they were just al dente I added them to the pan with the leeks and chicken. I added a little butter to give it a nice glaze (did you get that Heidi?). The bacon was sprinkled on top. A little cheese and crushed red pepper and that was dinner!
