Stuffed Artichokes


I ordered two artichokes from Misfits Market. They were nice and round and once stuffed and cooked, they were quite delicious. I used the recipe that is the closest to what my Mom made. The recipe is from the Food Blogga site. It was a fine stuffed artichoke. Rave reviews from both sides of the table. Click here for the recipe.


The leaves were tender and the stuffing was seasoned lightly. Next time more crushed red pepper!

Palm Sunday Dinner...

Well. Here we are.
Watching Palm Sunday Mass on YouTube.
Eating dinner like it was any other Sunday.
I did do a quick, socially distanced Meat Pie drop off at my Sister's and my Brother's. My sister gave me 2 homemade facemasks in exchange for the Meat Pie. Usually, we have dinner at my Sister's house with my brother and his wife. I decided to make one of my favorite Springtime dishes,  heck any time of the year I can find them, Stuffed Artichokes. I love the recipe I use, It tastes the closest to my Mom's recipe that I have found. Thank you FoodBlogga for sharing this one.

Cooking With Nonna

I bought my brother-in-law the cookbook, Cooking with Nonna, for his birthday. I have been following the Cooking with Nonna blog for awhile. This is where you can find those recipes that your grandmothers and aunts cooked when you were growing up. When I purchased the book for Ralph I got myself the Kindle version. This week we had 3 meals from the book. I will not be putting the recipes on my blog because I think you should buy the book. Sorry, but it is filled with recipes you will want to try. Trust me.

Pasta Fagioli. The recipe in the book called for dried beans. Well, of course, I did not have time to soak and cook the beans so I used canned beans. Wow, this is the recipe I have been searching for. This may be my go to Pasta Fagioli recipe.

Lemon Chicken. I can not even attempt to describe how moist and delicious this was. The recipe is similar to the chicken cutlet recipe I have been using but the cutlets are fried. The sauce of chicken broth, white wine, and lemon juice so light and flavorful.

And the Stuffed Artichoke. Wow! The recipe in the book instructs you to scoop out more of the inside of the artichoke than other recipes I have used. The bread crumbs are toasted, yes I used fresh breadcrumbs.  An absolutely perfect dish and Chris ate more of the artichoke than he usually does.

The Stuffed Artichoke

I want to start off by apologizing to Chris because I thought he burnt the artichokes. I had been thinking about these all day and they were as good as I hoped they might be. The recipe is from Food Blogga. I made them yesterday so they just needed to be reheated tonight. This time I did make a small change. I did not use the Kalamata olives. I used regular canned olives that my Mom used. But I like the flavor of the Kalamata olives so next time I will use them. And yes there will be a next time. These are not easy to make but damn they are soooo good!

By George, I Think I've Got It!

 
It has been a while now. I have tried and tried to make a Stuffed Artichoke that came close to what my mom use to make. They were a meal by themselves. In all my attempts the stuffing was not perfect. Until tonight. Delightful. Delicious. Every bite brought back wonderful memories. I used the same recipe that I have been using for a while but tonight I nailed it. The only thing I did different was maybe I used more bread. Maybe more olive oil. Or perhaps it was the Hail Mary's as I was mixing the stuffing. I figured that wouldn't hurt.

Oh that leftover Pot Roast, I turned it into a Shepherd Pie. Chris liked it. I was only focused on that artichoke!

Almost There

 
My Mom's stuffed artichokes were one of the dishes that I wish she showed me how to prepare. I have found this recipe on Food Blogga. It is the closest to my Mom's that I have found but I am still missing something. Tonight I used regular olives instead of the Kalamata. My mom used regular canned olives. We are getting closer. The seasoning was not spot on yet. Maybe next time....

Italian Stuffed Artichokes and The Patty Melt

Something for me and something for Chris on tonight's menu.
The Artichokes recipe is from Food Blogga.  Sorry about the quality of this photo. I can not believe I only took one photo! The stuffing is very similar to my mom's. I did not have pine nuts in the house so they were omitted. And I thing next time I will use regular canned chopped olives. I know that is what my mom used. Click here to try this amazing recipe.

About that Patty Melt. I can not think of a better recipe for a cold, very cold Sunday evening. The meat and onions and cheese add up to a most delicious type of dinner. I am trying to cook healthier this year but I think this is one of those "exception" recipes. Delicious but probably not something you should make too often! The recipe is from Bon Appetit. And what the heck is this? Well tomorrow a co-worker is returning to work after a couple of weeks off for medical reasons. I wanted to welcome her back with one of her favorite things, Nutella. So I found a recipe for a Nutella Swirl Bread. OMG! So darn easy and so amazingly delicious!* Here is the recipe. It is from the Laura in the Kitchen blog and it is amazing!

* - Yes this post was written on Monday, January 12. I brought the bread to work today and it disappeared very quickly!

The Stuffed Artichoke

I had to make this recipe again. This time I documented the steps. I do not usually photo the process of preparing a dish. Perhaps I will do this more often. The recipe was from FoodBlogga. The end result was as delicious as, dare I say it, as delicious as my Mom's. I am glad I found this recipe because I do not have my Mom's recipe.

Ricotta Cavatelli and The Stuffed Artichoke Recipe I Have Been Searching For

Homemade Cavatelli. Homemade Vodka Sauce, made with Homemade Marinara Sauce. That could have been dinner. We did not really need anything else. 
But I saw the Lyon Artichokes at Bishops, $2.99 each. I had to buy one. One was big enough for both of us with leftovers! But how to stuff it. I have been on quest for a recipe that mirrored what my Mom made. I have tried a few. Some I have posted others I have not. Well, this is it. I found it. When I got home with the massive artichoke I googled Lyon Artichoke. At the end of the informational site I found recipe links. I recognized one of the blog names as the same one I used for an Easter Pie. Food Blogga. The photo looked like what my Mom made so I tried the recipe. I was amazed. It was my Mom's recipe, well close to my Mom's. The instructions were simple and well presented. And the result was something I have been looking for for a long time. Chris was even amazed at how good the stuffing was. Thank you Susan Russo for your amazing blog. This artichoke was the perfect end to a perfect Saturday. And the Cavatelli with Homemade Vodka Sauce was quite amazing too!

The Last Day of Winter?

 
Only time will tell if spring will arrive tomorrow. I am really over the sweaters and layers and coats and scarves. But tonight's dinner reminded me of spring. I stopped by Bishop's to pick up the ingredients for tonight's frittatta and I saw a bin with giant artichokes. $2.99 each. They were so big that I only needed to buy one for the two of us. Not a bad deal. I stuffed them with what I think is close to my Mom's stuffing. Not bad but still need more practice.

Stuffed Artichokes and Chicken Pot Pie Soup

Yeah I know it is an odd combo. I saw the artichokes on sale and had to make them. The soup was already planned for tonight's dinner.
The stuffing for the artichokes is similar to what my mom used except I did not use mushrooms. I sauteed diced carrots and onions and the artichoke stems. I mixed breadcrumbs, parsley, Parmesan cheese, olives, olive oil, salt and pepper and added the sauteed vegetables. Not bad but not as good as Mom's. This will require more practice. And more stuffing. There was just not enough. I was reading a recipe by Lidia and it suggested baking them. My mom put them in a pan with water and steamed them. Next time...

The soup recipe comes from SkinnyTaste.com. It was quite different from anything I have tried before. A slurry? Isn't that from the 5th Dimension song Stoned Soul Picnic? Oh sorry that was surry down!

It did taste just like chicken pot pie... but I did miss the crust!


My version of Chicken Pot Pie Soup, from SkinnyTaste.com

Ingredients -
2 tbsp flour (to make gluten-free use 2 tbsp cornstarch instead)
1 cups water
2 cups fat free milk
1 large celery stalk, chopped
1/2 medium chopped onion
1 carrot chopped
1 chicken bouillon
fresh ground pepper
pinch of thyme
10 oz frozen classic mixed vegetables (peas, carrots, green beans, corn)
1 potatoes, peeled and cubed small
8 oz cooked rotisserie chicken, diced small
salt

Method -
Create a slurry by combining 1/2 cup of the cold water with flour in a medium bowl and whisk until well blended. Set aside.

Pour remaining water and milk into a large pot and slowly bring to a boil. Add celery, onion, mushrooms, chicken bouillon, thyme, fresh pepper, frozen vegetables and return to a boil. Partially cover and simmer on low until vegetables are soft, about 20 minutes. Remove lid, add potatoes and cook until soft, about 5 minutes. Add chicken, and slowly whisk in slurry, stirring well as you add. Cook another 2-3 minutes, until soup thickens, adjust salt and pepper to taste and serve. We did a cup of water the the broth to thin it out a little.

The Stuff That Dreams Are Made Of...

It has been that type of weekend. A lot of food memories. And shopping memories. I was out with my sister yesterday and I saw a dress that was so cute. My sister said that it was the type of dress my mom would have insisted on buying me. We were in another store and there was a shirt with pleats. We both said mom would have loved that!

Saturday I made my mom's Easter Meat Pie recipe. I actually double the recipe and ended up with 6 pies. I cut into one this morning and it took my breath away. It was just like my mom's.

Palm Sunday dinner was at my sister's house. She and her husband out did themselves.
We started with dandelion soup. I have mentioned many times on this blog that my sister makes the best chicken broth.
 
Next was Mary's Stuffed Artichokes. She has her mother's recipe down pat. Another good food memory.

 
Then we had a new entry... Ralph's Lasagna with Homemade Noodles. Forget about it. The meal could have stopped right there. Time could have stopped. If you are a regular reader you know my opinion about Homemade Pasta, last meal and all that. This melted in your mouth. But wait there is more.... he put hard boiled eggs in the lasagna! I have never had lasagna this good before, sorry to anyone else who has ever made lasagna but if you tasted this you'd agree. (Second favorite lasagna was the one my nephew made for Anna's First Communion, that was much lighter!)

Next was the Traditional Roasted Chicken Legs and Thighs with Potatoes. No Photo! Sorry but trust me it was really good. There were purple and red potatoes. And the chicken was so moist.

Dessert was my contribution. Limoncelllo Tiramisu. The recipe comes from Lidia's Italy and I found that recipe on epicurious.com. If I ever go anywhere and I have to bring a dessert this is what I am bringing. This was perfect. It was easy to make. It was light and everyone went nuts over it.

And a note about the wine. New favorite -

So that was our Palm Sunday dinner. It is a dinner that is filled with memories from past years such as -
"Where's the white meat? What do you mean there is no white meat!"
"Yes I think we should call an ambulance"
After meeting my niece's boyfriend, "Really, not all holidays are like this"
Ah memories. Sorry Heidi I am not adding a Streisand sound track here.
