And The Best Sister Award Goes To

This past weekend I was taken down by a virus that is going around. So I was banned from cooking for a few nights. That is when Lenore came to the rescue. I came home from work on Wednesday night feeling blah and by Friday at 8AM I was at the doctor's office. By noon on Friday, there was a knock on the door and my sister appeared with a large dish of Neopolitan Baked Pasta and her amazing Chicken Cutlets. I don't know who was happier, Archie or me. Archie loves Chicken Cutlets.
The pasta dish had spinach, ground beef, and mushrooms. I was not sure if Chris would like it because he is not a fan of mushrooms. Well, we made quite a dent in the dish! It was so very, very delicious. And Lenore said it is our Goddaughter Elenora's favorite.

And those family favorite Chicken Cutlets!

Lenore's Blueberry Muffin Recipe

This week Blueberries were on sale so I had to buy them. I was thinking about muffins but I didn't have a really good recipe. I asked my sister, Lenore, if she had one. Why yes she did. She had just made 2 dozen muffins. She emailed the recipe and they're truly the best muffins I have had.


The Americana Blueberry Muffin

½ cup butter softened
1 cup sugar   
2 eggs
1 tsp. vanilla   
2 cups flour
2 tsp. baking powder
½ tsp. salt   
½ cup milk
1-2 cups blueberries
1-2 tsp. grated lemon rind
2 tbsp. melted butter
2 tbsp. sugar, I used turbinado sugar

Preheat the oven to 375 degrees. Cream together the butter and sugar until fluffy. Add the eggs one at a time, mixing well. Add the vanilla. In a separate bowl, combine the dry ingredients and add them alternately with the milk to the batter. Mash ½ cup blueberries and add to the mixture, stirring just until blended. Toss the remaining berries with the lemon rind and fold in lightly. Spoon into greased muffins tins or custard cups. Bake at 375 degrees for 20-25 minutes. While still warm, brush each muffin with melted butter and sprinkle lightly with sugar. Thoroughly cool in tins or muffins will crumble. Makes 12 large muffins.

Lenore's Pork and Peas

My sister to the rescue again. Today Lenore brought over lunch, Couscous and Grilled Vegetable Salad! Oh, and the Mango and Sherbet for dessert! But she also brought over dinner. Pork and Peas. The peas were from her garden. My mom use to make something similar to this when I was little and I always loved it. It was in a little broth so bread is required. It was delicious. Chris enjoyed it too. But I don't have the recipe. I will try to get it from her and then I will post it.
