Breakfast! Banana Blueberry Muffins

The blueberries were only $1.77 a pint this week. And I had some bananas that were getting close to overripe. I google Banana Blueberry Muffins and found this recipe on PlatingCravings.com.

Wow! Delicious!! Moist and super easy to make. I had a dozen muffins completed from start to finish in less than one hour! And they are only 170 calories each! Excuse me but I think I might have one more...

So What Are You Having For Breakfast?


I found this recipe on the Half Baked Harvest site. I love this site. The photos always look amazing. I have tried a few of the recipes and they have all been well received.  Click here for the recipe for Cinnamon Crunch Bagels. I made 1/2 of the recipe and ended up with 6 nice sized bagels.


It was the first time making bagels that are boiled then baked. The dough was simple to work. I started the dough on Friday night and let it rise until Saturday morning. It was a breeze to work with.
The whole process was interesting. The making the hole, boiling and then baking. 


The results were delicious. I will definitely make these again, but I might leave off the crunchy topping. The topping was fantastic, but there is no way these can go into a toaster. Perhaps a toaster oven on a piece of foil (we don't have a toaster oven).

What Did You Have For Breakfast?

Don't you love the weekends? I do. I usually sleep in, getting up around 8-ish. My usual wake up time is 5AM. After a leisurely cup of coffee, I like to make breakfast. We have eggs on the weekends. Scrambled, fried, sandwiches with cheese, poached... You know the usual suspects. This week Chris posted a video on my Facebook page. That video would be our Sunday breakfast.

Saturday - 
Early yesterday morning I came across a video of a Japanese Ham and Cheese Rolled Omelet. That is what we had for breakfast yesterday.

Chris said this was the best omelet he has ever had. My work was done. Thank you, goodnight everyone.

Here is a link to the video on Facebook - Click Here. It is easy to make once you see it on the video. I do not have a Japanese rectangular omelet pan so I used my regular omelet pan. This was such a light breakfast, it didn't feel like we were eating more than one egg each.


Sunday -
Today we had Omelet-in-the-Hole. When I saw the video the first thing I thought was Brioche. I made the Brioche Loaf yesterday. Found a super easy recipe at the blog Simply Delicious.
Here is a link to the Facebook video of Omelet-in-the-Hole - Click Here. I think any bread will work. I actually think Italian would be nice. But the Brioche tasted like French Toast. This was an exceptional breakfast. I made one with onions, celery, jarred roasted red pepper and chopped ham. The other one I left out the ham and added sauteed zucchini leftover from last night's dinner.

Let's Talk Breakfast

This morning I woke up and of course grabbed my phone. Instead of checking emails I clicked on Pinterest. I saw a pin for 1 Hour Cinnamon Buns. I read the recipe and yes I had all the ingredients. I got up and immediately started baking. Well, I did have a cup of coffee first.
And the recipe took me an hour and 15 minutes but who is complaining? Not Chris or I. Darn this was a delicious Saturday morning breakfast. The dough is just amazing to work with. Here is the link to the recipe. I did make half the recipe. No way we could eat a whole batch!

Lenore's Blueberry Muffin Recipe

This week Blueberries were on sale so I had to buy them. I was thinking about muffins but I didn't have a really good recipe. I asked my sister, Lenore, if she had one. Why yes she did. She had just made 2 dozen muffins. She emailed the recipe and they're truly the best muffins I have had.


The Americana Blueberry Muffin

½ cup butter softened
1 cup sugar   
2 eggs
1 tsp. vanilla   
2 cups flour
2 tsp. baking powder
½ tsp. salt   
½ cup milk
1-2 cups blueberries
1-2 tsp. grated lemon rind
2 tbsp. melted butter
2 tbsp. sugar, I used turbinado sugar

Preheat the oven to 375 degrees. Cream together the butter and sugar until fluffy. Add the eggs one at a time, mixing well. Add the vanilla. In a separate bowl, combine the dry ingredients and add them alternately with the milk to the batter. Mash ½ cup blueberries and add to the mixture, stirring just until blended. Toss the remaining berries with the lemon rind and fold in lightly. Spoon into greased muffins tins or custard cups. Bake at 375 degrees for 20-25 minutes. While still warm, brush each muffin with melted butter and sprinkle lightly with sugar. Thoroughly cool in tins or muffins will crumble. Makes 12 large muffins.

Sausage with Ratatouille Sauce Subs

Ratatouille Sauce! Yes you read it correctly. I was at the Food and Wine site the other day and found the recipe, Linguine and Ratatouille Sauce. In the description of the recipe it is mentioned that the sauce would go nicely "on a hero with sausages." Bingo. Sunday night dinner! Wow it was good. Messy but good.
