Green Bean and Potato Salad


Today's recipe can be found on the site, Memorie di Angelina. The recipes on Memorie di Angelina feel like a culinary hug. They're full of simple, authentic flavors that remind me of the way my Mom and aunts used to cook. There's a focus on fresh ingredients, traditional techniques, and creating dishes that nourish both body and soul, just like the meals I grew up with.

Green Bean and Potato Salad

Ingredients-
500g (1 lb) yellow-fleshed potatoes, preferably small to medium-sized
400g (14 oz) green beans, trimmed
100 ml (1/2 cup) olive oil
2 Tbs white wine vinegar
1 small shallot, finely minced
A handful of fresh green herbs such as parsley, basil, mint, or marjoram or a mix, minced
Salt and pepper

Method-
For the vinaigrette:
Place the potatoes unpeeled in a large pot, add enough water to cover them well. 

Bring the water to a boil. 

Cooking until the potatoes are tender but not mushy, usually about 20 minutes for medium potatoes.

Remove the cooked potatoes from the water with a skimmer and place in a colander to cool.

Now add the green beans to the same pot along with a good pinch of salt. Boil them until they are crisp-tender. 

This can take anywhere from 5 to 15 minutes depending on the bean. 

Remove them to another colander and rinse them with cold water to cool them quickly. 

Let them drain.

While the vegetables are cooling/draining, you can turn to your vinaigrette. 

Whisk the oil and vinegar together in a small bowl until they have fully emulsified. 

Stir in the minced shallot, along with the minced herbs and a good pinch of salt and a grind of pepper. 

Taste and adjust for seasoning, then set aside until needed.

As soon as the potatoes are cool enough to handle but still warm, cut them into bite sized pieces and place them in a mixing bowl. 

Add the green beans. 

Pour the vinaigrette over the vegetables then toss well, until they are well covered with the vinaigrette.

Give the salad a final taste and adjust for seasoning if need be.

Let the salad rest for at least 30 minutes before serving.

Frittelle di Pasta Cresciuta Con Zucchine. This recipe is from Memorie di Angelina. This is one of my favorite blogs. The recipes remind me of my Mom's cooking.

Oh, I just love this recipe. Chris loves this recipe. The result is small balls of fried bread with zucchini. Real easy, you do need to let the dough rise. The zucchini was from my sister's garden. More zucchini recipes to come later this week.

I think this might be a good Christmas Day appetizer...

Baked Frittata with Zucchini, and Pane Bianco

Tonight we had a perfect summer dinner. Tonight's recipe came from Memorie di Angelina. I love this blog. A lot of the recipe remind me of what my Mom and Aunts use to cook. This recipe was delicious and light. I, of course, omitted the garlic. And my basil plant is a little empty looking so I opted for dried basil and the oregano just seemed like it should be added.

Baked Frittata with Zucchini-

Ingredients-
4-6 medium zucchini, trimmed and sliced into rounds
6-8 eggs
100g (3-1/2 oz) grated Parmesan cheese or more to taste
Dried basil
Dried oregano
Salt and pepper
Olive oil

Method-
In a skillet large enough to contain all the zucchini rounds in one layer, heat the olive oil. Add the zucchini.

Fry the zucchini until lightly golden brown on both sides. Transfer to a plate lined with paper towels or a cooling rack and allow the excess oil to drain off.

In a large mixing bowl, lightly beat the eggs and grated cheese together. Add the fried zucchini rounds and basil leaves then season with salt and pepper to taste.

Take a non-stick pie plate or baking sheet with edges at least inch tall (I used a 9x11 cake pan), grease the bottom with a bit of olive oil, then add all of the egg mixture, making sure that the zucchini rounds are evenly distributed.

Carefully transfer the baking dish to a hot oven (400˙F), taking care not to spill the egg and zucchini mixture, and bake for 15-20 minutes, or until the eggs are cooked through and lightly browned on top. If the eggs are cooked but the top is not brown enough to your liking, you can run them under a broiler for a minute or two.

And there was the bread. King Arthur Flour is doing a bake-a-long. Yes, I am in! This weeks challenge was Pane Bianco. What an amazing bread this was! The texture of the dough after it rose was just so workable. I filled the bread with roasted cherry tomatoes,  shredded mozzarella, Parmigiano cheese, dried basil, and oregano.
 
I could have put more tomatoes in but the flavor was perfect. We made half of the loaf disappear quickly! Looking forward to the next baking challenge. Can you tell I am going through The Great British Bake Off withdrawal...

Scarola e Fagioli

Scarola e Fagioli (Escarole and Beans) was what I wanted for my birthday dinner.

 
Yes, today is my birthday. And today is Ash Wednesday which meant we could not eat meat. Not a problem, for me anyway! I saw the recipe for Chicory and Beans on Memorie di Angelina site the other day. I knew that it was what I wanted to have for dinner on my birthday. We also had some of the Foccaccia bread that I made on Sunday and a very nice bottle of Montepulciano D'Abruzzo. This dinner reminded me of something my mom would have made. It was simple and delicious. I could not find Chicory so I used Escarole. The escarole was a good substitute.

Pizza Di Scarola

I really like escarole. I like pizza, it's a bread thing. So when I saw the recipe for Pizza Di Scarola (Escarole Pie) on the Memorie di Angelina site I was very excited. I made the dough, using Jim Lahey's amazing recipe. Then Chris saw the recipe and asked why there was no meat in it. Not a problem. Sausage was the perfect addition. And my mom never used raisins so I left them out. But I added onion when I was sauteing the sausage. And I also added the cannelini beans. Seemed to just be an automatic reaction when I was sauteing the escarole! This was hit!
