Slow Cooker Guinness Corned Beef


This is the only recipe I will ever use for making Corned Beef. I love the blog this recipe is from, What's Cooking Italian Style. The recipe is so very easy and the meat comes out perfect. I even like the way the cabbage came out.

Potatoes, Onions, and Hot Dogs

One of my favorite food blogs is What's Cookin' Italian Style Cuisine. About a week ago there was a post that looked like a meal I had when I was little.  I reminded me of my grandmother's house on Morse Street in Hamden. I had a meal like this either at my Grandparent's apartment or at my Aunt Marie's apartment, she lived upstairs from my Grandparents. When I saw the blog post I knew I had to make this for dinner. Tonight we had Potatoes, Onions, and Hot Dogs. This is true comfort food. Simple ingredients but the flavors were perfect together. So simple and so delicious.

Cheesy Frankfurters, Potatoes and Peppers

When I little and I would spend the night at my Aunt Marie's house she would make fried potatoes and onions as a side dish. I loved them. The other day I was checking out some of my favorite blogs and I stopped in my tracks. Cheesy Frankfurters, Potatoes and Peppers on What's Cooking Italian Style Cuisine. It looked just like my Aunt's dish but it was baked! I knew Chris would like this. So easy you have to love it.

Grease a 13x 9 baking pan. I used 2 potatoes, 4 hot dogs, and 1 red pepper. Cube the potatoes, cut up the hot dogs, chop the bell pepper and add salt, pepper and cayenne pepper to taste. I added some chopped onion. Arrange all ingredients in your greased baking pan. Drizzle the top with olive oil and sprinkle with chili powder. Bake at 400˚ until the potatoes are browned on top and hot dogs begin to brown, stirring once or twice. The time will depend on the size of you potato cubes. You want the potatoes to get a little crisp. Sprinkle shredded cheddar cheese on top and return to the oven until it melts, about 10 minutes. I had this in the oven for almost an hour. The result was perfectly crisp potatoes. The crispy bits on the bottom of the pan were the best. As Chris said, it was delicious!

Pancetta Wrapped Stuffed Chicken Rolls And I Finally Made Ricotta


The past 2 nights I have gone out. At one time going out on both a Friday and Saturday night was not a big deal. But I stayed awake past 10pm two nights in a row! Tonight I wanted to make a nice dinner. I found the recipe for  Pancetta Wrapped Stuffed Chicken Rolls on the Italian Food Forever blog. This was so good. My sauce did have a couple of lumps, but I am sure no one noticed. It tasted amazing! Click here for the Recipe.

Now the side dish. I hear people talking about their "Bucket Lists" all the time. I don't really have a list. But making ricotta would be on it if the list existed. I did it. I made homemade ricotta. Why have I not made it before now. I have no idea. It is really delicious. It was scary how easy it was. The hardest part was not letting the milk/cream boil over. I found the recipe on What's Cookin' Italian Style Cuisine. Love the results.
So I have this homemade Ricotta and I need to use it. I found the recipe for Zucchini and Ricotta on Elizabeth Minchilli in Rome blog. Wow, wow, wow. Perfect for the summer. The lemon and olive oil, also known as my favorite dressing. And the Ricotta was such a treat!
