Pizza Fritta - Air Fried


I love the Air Fryer. We had Pizza Fritta this afternoon while watching football. I had the dough in the freezer, the Jim Lahey recipe. The sauce was a simple marinara. I sprayed the tray with olive oil and brushed a little on the tops of the dough. 8 minutes. Flip and another 3 minutes. Light and crispy. Just like what you would get at a church carnival, minus the grease!

Thank You Rocco's Off Wooster For Making Dinner


Silly me! I thought I would make dinner tonight. Nope. This was too easy and too delicious. From Rocco's Off Wooster. Two of our favorites. Lucia's Favorite, really that is the name of this pie! And the classic Sausage and Pepper.

Friday Night Pizza

Leftover beef from last night's steak and cheese subs, some bacon, and cheese. Delicious and easy to prepare. The dough was in the freezer. Yes, it was the Jim Lahey recipe. Also loving the new pizza pan Chris got me for Christmas. It helps the dough bake into a super crispy crust.


I hope to be back and doing more regular postings. 

We had a tough time with our cat Archie. He has been sick since before Christmas and we had to put him down last Saturday. Crap, what a sad time we have had. But Lucy is still with us and as cute as ever.

New Year, New Pizza Pan


For Christmas, I received a T-Fal Air Bake Pizza Pan. It has holes in the bottom. The pizza looked just like a takeout pizza. I did not use my usual crust recipe. I used the recipe from How to Bake Everything by Mark Bittman. I love Mark Bittman but I prefer the Jim Lahey pizza crust recipe.


The toppings were what made this an over the top delicious pie. I used up things leftover from the holidays. Salami, Proscuitto, Bacon, and Vegan Pepperoni from the Three Vegan Girls Creamery.
Wow! What a combination. The picture above is of the first 3 slices I ate. Yes, I went back for seconds!

If It's Sunday...


Have our dinners become too predictable? Yes it is Sunday and yes we are having pizza. But not just any pizza. A leftovers pizza. We had an extra pork chop that no one ate last night and those peppers and onions could not be wasted. Yes I even put the leftover zucchini on the pie. It was delicious! We ate almost the whole thing!

Our First Margherita Pizza


I have never made a Margherita Pizza until tonight. When your husband brings home the most delicious tomatoes from Coles Farm and your basil plant is busting with leaves what else can you do? I stopped at Bishop's for some fresh mozzarella and headed home. I took pizza dough out of the freezer this morning. I believe I could have eaten the whole pie myself. Just ask my friend Heidi about my college days, it can be done. I was an adult about this and only had 3, okay maybe 4 pieces. The tomatoes are the best ever!!!

Pizza For Dinner. Pizza For Breakfast.


The Chicken Cutlet was from Wednesday night, sorry there were no photos. It was my go-to recipe. We had a couple of pieces of chicken left over. That was the beginning of this dinner. I mixed the pizza dough, the Jim Lahey recipe before I left for work Thursday morning.  I stopped by Bishops on the way home tonight to pick up the salad ingredients. The lettuce, and Mozzarella, Ricotta, and tomatoes. The recipe for the Chopped Italian Salad Pizza was from PureWow.


Yeah, this was really good. The pizza crust came out perfectly crisp. The layer of ricotta on the crust was what brought the whole dish to an over the top level. I usually use Calabria brand ricotta. Tonight at Bishop's I picked up Luzzi's brand. Luzzi's is local. The taste of it was over the top good. Wow! It tasted like homemade. The whole idea of a salad on a pizza was different. Do you eat it like a slice of pie or with a fork and knife? We opted for both ways.



Then there was breakfast. Who does not like leftover pizza for breakfast? Well, put a poached egg on top of this leftover! Wow! Happy Saturday!

If It's Sunday It's Pizza

Not just any pizza. This one had the works on it. Onion, Bacon, Sausage, Roasted Peppers, sauce, cheese. Not bad at all. And not a lot leftover. The pizza dough was the Jim Lahey recipe. And I keep forgetting that I have his pizza book on my Kindle. Oh well, next time. Maybe next Sunday.

Chicken Parm, Onion and Pancetta Pizza

Chicken Parm, Onion and Pancetta Pizza or what I like to call using up leftovers. We had some chicken cutlets leftover so Chris suggested adding them to the pizza toppings. I had sauteed the onion and pancetta earlier today to help the building of the pie move swiftly.
The crust was the Frank Lahey recipe. The recipe is at the end of this post. The pie was fantastic. I used canned diced tomatoes, Del Monte Fire Roasted, in place of a sauce. The pie was seasoned with oregano, basil and crushed red pepper.

I mixed the crust dough last night and kept it in the fridge. Today I rolled the crust out and put on a baking sheet that was lightly brushed with olive oil. I left the crust to raise for over an hour. Next it was topped with Parmesan Cheese, the tomatoes, the pancetta and onions, more tomatoes, seasonings and shredded mozzarella and more Parmesan. The pie was then drizzled with olive oil. It went into a 450˚ oven for about 20 to 25 minutes.

 
We let it sit for about 5 minutes but could not wait any longer. The pie was then sliced and devoured!

Jim Lahey Pizza Dough-

Ingredients-
3 3/4 cups bread flour
2 1/2 tsp instant or other active dry yeast
3/4 tsp table salt
3/4 tsp plus a pinch sugar
1 1/3 cups water, room temperature (about 72 degrees F)

Method-
In medium bowl stir together the flour, yeast, salt and sugar. Add the water and using a wooden spoon or your hand, mix until blended, at least 30 seconds. The dough will be stiff. Cover the bowl and let sit at room temperature until the dough has more than doubled in volume, about 2 hours.

If It's Sunday It Must Be Pizza?

Bad blogger. We have been eating dinner every night but the heat has made eating seem more like a chore. So this is my first blog post since last week. And what did I make tonight?
Pizza! It's just one of those traditions I grew up with that I can not seem to kick. Tonight we had onion, bacon and zucchini pizza. It was delicious and the best way I know to end a fantastic weekend.

Three Pork, Three Zucchini, Three Onion and Three Cheese Pizza

 See if you can guess who had which half of the pizza? 

Chris had the half that had the bacon, prosciutto, and pork tenderloin. 

My half had zucchini, yellow squash, and pattypan squash. There was a shared layer of sauteed shallots, onions, and scallions. And there was also Parmigiano, shredded Mozzarella, and Fresh Mozzarella.

Heart-Shaped Food

Happy Valentines Day! We started the day with Fresh Apple and Cinnamon Scones with Pecans. Here is the recipe to which I added 1/2 cup of chopped Pecans. And yes they are heart-shaped.

I love pizza on Sunday nights. Childhood memories and all that. I do need to work on my pizza dough heart shaping technique but the flavors were oh so good. For Chris I made onion and bacon. For myself, I had some roasted broccoli and some cooked broccoli rabe in the freezer. Both of these pizzas were delicious!

Those Chorizo Meatballs from the other night and sausage, peppers and onions from a meal that will appear later this week. The dough was Jim Lahey's recipe, of course. Baked at 450 degrees in the convection oven for 25 minutes. "Delicious!"

The small pie was spinach and olive. Yeah that was darn good too!

"The Works" Pizza

It has been a while since we have had our Sunday night Pizza. Today I sauteed onions and peppers. There was the leftover steak and some grilled zucchini. There was a meatball. And there was a little smoked Gouda. I cleaned up bits and pieces from the fridge. Damn, what a good pie. It was a definite fork and knife pie. You could not fold this crust because of the amount of toppings. But, I heard no complaints.

Pizza For Me and Pizza For You

Tonight is a big TV night. No not the Oscars. On the Food Network on Cutthroat Kitchen one of the contestants is the son a couple I worked with at Fitzwilly's Restaurant back in the 80's. Their son is a chef. Very excited to see the outcome. And of course Downton Abbey is on first!

Sunday Night Pizza

You know what I love about pizza? The toppings can be anything you have in the fridge. Tonight I made half the pie with bacon and onions. The other half was onion, acorn squash (leftover from last night) and Burrata Cheese (from last Saturday's dinner). Nice way to start the week off.
