Sausage, Pepper and Spaghetti Squash Casserole


This dinner started off as sausage and peppers. I roasted the sausage and peppers along with a sliced onion and marinara sauce. As everything was roasting in the oven I noticed the spaghetti squash I received from a co-worker. 

I thought why not make a casserole with sausage and peppers and spaghetti squash! Chris cut the spaghetti squash in half for me in the oven it went for about an hour, maybe 50 minutes.

I shredded the squash and mixed it with some marinara sauce, cheese, and butter. That went into a greased baking dish, and greasing it makes the clean up easier. The sausage and peppers went on top of the squash and I added a bit more sauce and cheese to the top.

I ended up with enough to fix 2 baking dishes. One for the freezer!

Rave reviews were received for this dinner. I liked it because it tasted amazing and with the spaghetti squash we did not need to have the sausage and peppers with rolls. Never a bad idea to cut a carb or two.

Sausage and Pepper Subs

This past weekend I roasted Sausage, Peppers, and Onions. Tonight we made subs with the roasted sausage and peppers. Super easy cleanup. That is what is most important this week.

No Recipe Sausage and Peppers

Well if you have never made Sausage and Peppers before I guess you could follow this as a recipe. Line a baking pan with foil, easy clean up is always important. Spray the foil with cooking spray. Cut up Italian sausage, sweet or hot. We prefer sweet. Cut up peppers. I used red, yellow and green. Cut up an onion. Toss all the ingredients with olive oil, salt, pepper, oregano, basil, and parsley. Preheat oven to 375˚. Place pan in oven for 20 minutes. After 20 minutes stir the contents of the pan. Return to the oven for another 20 minutes. Watch it so the veggies do not get burnt. Next, add a can of crushed tomatoes to the pan and stir. I use about 1/2 of a 28 oz can. Return to the oven for 10 to 15 minutes.
That's all there is to it. I made this on Sunday and Chris just had to heat it up when he got home. We made short work of the whole pan of sausage and peppers!

Roasted Sausage and Peppers

I am an American of Italian descent who is not a huge garlic fan. Another thing I do not like is the smell of the house when you fry sausage and peppers. So my solution is to roast them. I cut the red and green peppers into strips, the onions into slices and cut the sausage links into small pieces. I mixed everything with olive oil, salt, pepper, oregano, parsley and basil. I lined a roasting pan with foil, I also hate scrubbing pans. I roasted the sausage and peppers at 425 degrees for 45 minutes. After it came out of the oven I added some sauce to it. Back in the oven until the sauce was warm. Some Italian bread to make sandwiches and we cleaned the plate.
