Air Fryer Chicken Katsu with Homemade Katsu Sauce


Tonight was all about keeping things simple and delicious, and this
Air Fryer Chicken Katsu with Homemade Katsu Sauce recipe from AllRecipes.com totally delivered!

The real winner, though? The out-of-this-world sauce. Packed with rich brown sugar, it developed a deep, complex flavor that almost reminded us of coffee. So unexpected, but oh-so good!

For sides, I stuck with the classics: Basmati rice and some sauteed zucchini. Simple, yet the perfect complement to the star of the show.

This recipe is a definite keeper.


Ingredients

Katsu Sauce:
½ cup ketchup
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon sherry
2 teaspoons Worcestershire sauce

Chicken:
1 pound chicken tenders
1 pinch salt and ground black pepper to taste
1 large eggs, beaten
1 ½ cups panko bread crumbs
2 tbsp cornstarch
cooking spray

Method-
Prepare sauce: Whisk ketchup, soy sauce, brown sugar, sherry, and Worcestershire sauce together in a bowl until sugar has dissolved. 
Set katsu sauce aside.

Preheat an air fryer to 350 degrees F.

Meanwhile, lay chicken pieces on a clean work surface. Season with salt and pepper.

Place beaten egg in a flat dish or shallow bowl. 

Pour bread crumbs into a second flat dish.

Dredge chicken pieces in egg and then in bread crumbs.

Repeat by dredging chicken in egg and then bread crumbs again, pressing down so the bread crumbs stick to the chicken.

Place chicken pieces in the basket of the preheated air fryer.

Spray the tops with nonstick cooking spray.

Air fry for 10 minutes.

Flip chicken pieces over using a spatula and spray the tops with nonstick cooking spray.

Cook for 7 minutes more.

Serve with katsu sauce.

Fish and Chips

First Friday of Lent. 


I know Lucy loves Friday night dinners during Lent. Tonight we decided on Air Fryer Fish and Chips. Big Y had the packages of Naked Cod for $13. There were 2 pieces of cod that I cut into cubes. Just enough for Chris, Lucy and me.


We did the fish in the air fryer and the chips in the oven.

The fish was so flaky and it had really fresh taste.
Fish and Chips Dinner. We served the fish and chips with tartar sauce, ketchup, or malt vinegar. The fries were crispy on the outside and soft on the inside.



Air Fryer Fish Sticks

Ingredients-
2 large eggs
3 tbsp milk
2 cups Panko breadcrumbs
1/4 tsp Paprika
1 cup all-purpose flour
10 oz. Cod, cut into sticks
1 tbsp olive oil
1/4 tsp sea salt
pinch ground black pepper
Tartar Sauce for serving

Method-
Combine the eggs and milk in a bowl.

Pour the breadcrumbs and paprika into a pie plate, or some dish that has sides. 

Pour flour into a second pie plate.

Coat the fish sticks in olive oil, salt, and pepper.

Dip the fish sticks into the flour, then the egg mixture, and finally the breadcrumbs.



Insert the Fry Tray into the basket of the air fryer.

Set the cooking temperature to 350˚F and cooking time to 3 minutes to preheat the air fryer.

Place the fish sticks in the basket. Insert the basket into the air fryer.

Set the cooking time to 12 minutes.

Flip the fish sticks halfway through the cooking time.

Serve with tartar sauce.

Air Fryer Parmesan Chicken Bites


Applause from the other side of the table! This recipe is from the All Recipes site.
I did make a small edit. I added Cornstarch to the Panko bread crumb mixture. It helps crisp up the coating in the air fryer. I used Chicken Tenders instead of the whole breast. That sped up the production a bit. The meal came together in less than 30 minutes.

Ingredients-
6 ounces chicken tenders, cut into bite-size pieces
1 large egg
2 tablespoons heavy whipping cream
1/2 teaspoon salt, divided
3/4 cup panko bread crumbs
1/4 cup cornstarch
1/2 teaspoon Italian seasoning
2 tablespoons shredded Parmesan cheese
nonstick cooking spray

Method-
Preheat an air fryer to 400 degrees F for 5 minutes.

Combine egg, whipping cream, and 1/2 of the salt in a bowl. Whisk until yellow and frothy.

Mix panko, corn starch, herbs, and remaining salt together in a separate shallow bowl until well combined.

Dip chicken pieces first into the egg mixture, followed by panko, and set in the air fryer basket.

Air-fry for 13 minutes, shaking the basket every 5 minutes. The cooking time depends on how big or small you cut the chicken breasts (or Chicken Tenders)
Spray with cooking spray and sprinkle with Parmesan cheese.
Air-fry until chicken is no longer pink in the center and the juices run clear and Parmesan is melted.
An instant-read thermometer inserted into the center should read at least 165˚

Air Fryer Fish and Chips

It is Lent. We are starting off with Fish and Chips. I took care of the fish. The chips were frozen hush puppies and Chris was on Tartar Sauce.

Everything was delicious and yes, Lucy loved the fish!


Air Fryer Fish Sticks

Ingredients-
2 large eggs
3 tbsp milk
2 cups Panko breadcrumbs
1/4 tsp Paprika
1 cup all-purpose flour
10 oz. Cod, cut into sticks
1 tbsp olive oil
1/4 tsp sea salt
pinch ground black pepper
Tartar Sauce for serving

Method-
Combine the eggs and milk in a bowl.

Air Fryer Orange Chicken

Too bad because this was really delicious. Plus, it was easy to prepare and fast to cook.

Air Fryer Orange Chicken

Prep Time 15 mins

Cook Time 15 mins

Ingredients-

FOR THE CHICKEN

1 lbs raw boneless, skinless chicken breast

1 large egg, whisked

2/3 cup cornstarch or potato starch (see blog notes)

FOR THE SAUCE

1/3 cup freshly squeezed orange juice, from about 2 medium oranges

1 tsp minced ginger

1 tbsp cornstarch

2 tbsp rice wine vinegar

2 tbsp oyster sauce 

3 tbsp soy sauce

2 1/2 tbsp honey

1 tbsp water

1/4 tsp red pepper flakes


Method-

Preheat air fryer to 375F.

Cut chicken into 1-inch cubes. Mix together with whisked egg until all chicken is coated.

In a large plastic bag, add the cornstarch. Using tongs, take the chicken pieces out of the egg mixture, allowing excess egg to drip off and add to the bag.

Close the bag and shake chicken pieces around until fully coated by the cornstarch. Remove pieces from the bag and place them on the cutting board that you used to cut up your chicken

Liberally coat the side of the chicken facing up with cooking spray. Add the chicken, sprayed side down, to the basket of your air fryer. Now spray the side facing up, so all sides of the chicken are coated.

Air fry at 375F for 10-15 minutes, or until chicken is slightly browned and cooked through

As the chicken cooks, make the sauce in a medium-sized skillet. Whisk sauce ingredients together and cook over medium heat, stirring constantly, until the sauce thickens–about 5 minutes.

Toss cooked chicken with sauce and serve immediately.

Air Fryer Hot Dogs and Potatoes



One of my favorite things to have for dinner is Fried Hot Dogs and Potatoes. It can be time-consuming, well you have to stay by the stove so nothing burns. Using the air fryer made the meal super easy.

Preheat the air fryer to 400 degrees.

I cut up potatoes and onions and put them in a zip lock bag with olive oil, salt, pepper, oregano, thyme, rosemary, and sage. Mixed it all together and put them in the air fryer for 15 minutes. Stir after 10 minutes. Your cooking time may vary depending on how big you cut the potatoes. Add the cut-up hot dogs and air fry for another 5 minutes.

Serve with ketchup and mustard.

Ina Garten's Unforgettable Beef Stew and Air Fryer Eggplant Fries

Yesterday I picked up stew beef. I was going to try a different recipe, but why stray from a recipe that always works.


Ingredients-
1 pound good-quality beef chuck, cubed into ~ 1 ½" sized pieces
1 1/2 cups of good red wine
2 bay leaves 
1 cup flour  
kosher salt 
freshly ground black pepper
olive oil 
1 yellow onion, chopped 
2 carrots, peeled and cut diagonally into 1 ½" chunks
1/2 lb small potatoes, halved or quartered
1 cups beef broth
1/2 tsp chopped dried rosemary
1 Tbsp Worcestershire sauce 

Method-

The night before, or a couple of hours before you start...
Place the beef in a bowl with red wine and bay leaves.
Marinate overnight in the refrigerator.
Brown the Beef
The next day, preheat the oven to 300° F.
In a medium-sized bowl, add the flour,  1/2 tbsp salt, and pepper, and combine.
Lift the beef out of the marinade with a slotted spoon, discard the bay leaves, saving the marinade.
In batches, dredge the cubes of beef in the flour mix before shaking off the excess.
Heat a glug of olive oil in a large pot and brown half the beef over medium heat for 5 - 7 minutes, turning to brown evenly. See the notes above.
Place the seared beef in a bowl and continue to brown the remaining beef, adding oil as necessary. (If the beef is very lean, you'll need more oil.) 
Remove the beef and place it in a bowl.

Prep the Veggies
In the Dutch oven, heat another glug of oil before adding the onions, carrots, and potatoes.
Cook for 10 minutes over medium heat, stirring occasionally.
Add the vegetables to the bowl with the beef.
Finish the Soup
Add the reserved marinade to the empty Dutch oven and cook over high heat to deglaze the bottom of the pan, scraping up all the brown bits with a wooden spoon 
Add the stock, rosemary, Worcestershire sauce, 1 tsp salt, and 1/2 tsp pepper. 
Add the meat and vegetables, including all the juices to the Dutch oven and bring to a simmer over medium heat on top of the stove. 
Cover the pot and place it in the oven to bake it for about 2 hours, or until all of the meat and vegetables are tender, stirring once during cooking.
If the stew is boiling rather than simmering, lower the heat to 250 or 275° F.


And those Eggplant Fries. We went out to dinner with my sister and Ralph last night and of course she gave me eggplant. At dinner, Ralph said to make Air Fryer Eggplant Fries

Ingredients1 cup Italian seasoned breadcrumbs2/3 cup grated parmesan cheese1/2 tsp garlic powder1/2 tsp pepper3 eggs3 tbsp water1 eggplant1/4 cup all-purpose flourcooking spray
InstructionsPrepare your breading station. In one bowl, combine breadcrumbs, cheese, garlic salt, and pepper. Stir well. In a second bowl, combine eggs and water and whisk well.Peel eggplant (if desired) and then slice into "fries". Try to keep size uniform so they cook evenly.Before beginning breading, preheat your air fryer. Set it to 375 degrees for 10 minutes.Place all eggplant fries in a large bowl and add flour. Toss to coat.Then, dip the eggplant into egg then breadcrumb mixture. Repeat until all fries are breaded.Depending on the size of your air fryer these may need to be done in 2-3 batches. After the air fryer is preheated place a single layer of eggplant fries in the air fryer. Spray with cooking spray over the fries to help them get more crispy.Cook at 375 degrees for 6 minutes or until golden brown.Remove from the air fryer and sprinkle lightly with parmesan cheese if desired.Serve with pasta sauce for dipping or enjoy plain.

Grilled Pork Chops and a Birthday Girl!


Perfect weather for grilled pork chops. Marinated the center cut, bone-in pork chops in a mixture of 2 tbsp. Olive oil, 1 tsp Dijon mustard, 1 tsp brown sugar, 1 tbsp soy sauce, salt, and pepper.

Some sauteed spinach and roasted potatoes.

Today is Lucy's Birthday! 13!!!! I had to make her something special for dinner. She loves air fryer salmon. I only brushed the salmon with olive oil before air frying it.

Preheat air fryer to 390˚. Place dried salmon on parchment paper. Brush with olive oil. 

Place parchment into preheated air fryer. 10 minutes. That's it. Test for doneness by sticking a fork into the thickest part of the fillet and twisting gently. It should flake easily. Remove the fish from the basket immediately or it will continue to cook.


All of the salmon was not for Lucy, but she will have a little snack over the next couple of days. I will be eating most of it as the protein in my salad for lunch. You see, it is a win win for both her and I.

Three Words - Air Fryer Salmon

I am not sure who was more excited about tonight's dinner. Chris, who only had to grill his porterhouse steak and the corn from Cole's Farm. Moi, who absolutely loved this dinner. Or Lucy, who also absolutely loved this dinner.


Air Fyer Salmon is the new house Salmon recipe. I googled Air Fyrer Salmon and found a recipe on CookingLight.com.

Measure the paper first, cutting it just a little smaller than the size of your basket and leaving longer sides, which will help you lift the salmon out of the basket easily.

Preheat air fryer to 390˚. Place dried salmon on parchment paper. Brush with olive oil. Season with parsley, lemon zest, lemon juice, salt and pepper.

Place parchment into preheated air fryer. 10 minutes. That's it. Test for doneness by sticking a fork into the thickest part of the fillet and twisting gently. It should flake easily. Remove the fish from the basket immediately or it will continue to cook.


Perfect flavor. Perfectly cooked. Flaky texture. Perfect.


Picked up a bottle of wine to go with dinner. Nice choice!


Did I mention that Lucy loved this dinner? Her piece was the one with no seasonings.

Filetto Di Manzo All'Aceto Balsamico


It seems that this has become a once-a-week posting blog. Tonight we had Filetto Di Manzo All'Aceto Balsamico, Beef with Balsamic Vinegar. It is from La Cucina The Regional Cooking of Italy, or as Chris calls it - The Big Book. The recipe is from the Emilia-Romagna region. The recipe came together super fast, easily a 20-minute meal.

The sauce was quite good. There were some comments about the texture of the meat. I had no problem with the texture, but one of us did.

I made our usual sauteed zucchini and Air Fryer Baked Sweet Potatoes. Again, here we were split on the potatoes. But the Air Fryer is definitely the way to go with baked potatoes. The kitchen did not get super hot with the oven on for 45 minutes. The skins were crispy and the interior was creamy.

Filetto Di Manzo All'Aceto Balsamico
Ingredients-
3/4 lb. beef tenderloin, cut into 2 slices
1/4 cup flour
1 tbsp olive oil
4 tbsp balsamic vinegar
1 cup beef broth

Method-
Flatten the tenderloin slices with a meat pounder and dredge them in the flour. Shaking them to remove any excess.
Heat a saute pan to high and grease it lightly with olive oil.
Salt the slices, then cook them on high heat on both sides, sprinkling with 1 tbsp of balsamic vinegar.
Remove the meat from the pan and keep warm.
Prepare a thin sauce by combining the remaining vinegar, broth, and 1 tbsp flour.
Return the meat to the pan with its juices and cover with the sauce and serve piping hot.

Air Fryer Steak, Smashed Potatoes and Arugula Salad




I purchased this steak, 1.13 pounds at Robert's today. It came to 6 dollars and change. It was the most amazingly tender steak. Just enough for the 2 of us.

I used the Air Fryer to cook it. Seasoned the meat (that was at room temperature)  with just salt and pepper. 7 minutes in a preheated Air Fryer set at 400˚. Flipped it over and set it for an additional 6 minutes. We let it rest for about 10 minutes and the came out perfect!


For sides, I made the Air Fryer Smashed Potatoes. OMG, they are so delicious. Crunchy on the outside and creamy on the inside.

Air Fryer Smashed Potatoes

Ingredients-
1 1/2 lb baby Yukon Gold potatoes 
2 cups chicken stock 
1/4 cup unsalted butter (1/2 stick) – melted
2 tsp olive oil
1 tsp dried parsley
1/2 tsp paprika
Kosher sea salt & freshly ground black pepper

Method-
Place the potatoes in a medium-sized pot.
Pour in the broth, enough to cover the potatoes.

Bring to a boil and cook until potatoes are fork-tender.

Drain the potatoes and transfer them to a cutting board.

In a small bowl combine the melted butter, olive oil, parsley & paprika.

Dip the bottom of a small drinking glass in the butter mixture and gently press the potatoes with the bottom of the glass. 
Dip the glass into the butter as needed while smashing the potatoes.

Be careful not to smash them too hard so they break apart.

Just enough to flatten slightly.

Preheat the air fryer to 400 degrees.

Spray or lightly coat the air-fryer basket with a little bit of olive oil.

Gently transfer the potatoes in one layer to the basket of the air fryer.

Brush some of the butter mixtures with a basting brush over the tops.

Sprinkle salt & pepper evenly over the potatoes.

Air fry for 10 minutes at 400 degrees.

Remove the basket & gently flip the potatoes.

Brush with more of the butter mixture. Season again with salt & pepper.

Continue to air-fry for 8 minutes at 400 degrees until crispy and browned.

Air Fryer Fried Chicken Again


Nailed it! This time I tried a different recipe for the Air Fryer Fried Chicken and was very pleased with the result.

The recipe I followed was from Fabulessly Frugal,https://youtu.be/50lBseukzPg.

I did make some changes. 

I did not add the spice mix to the marinade. I marinated in only buttermilk (Milk and Lemon Juice) and the hot sauce.

For the spice mix, I left out the onion powder. But other than that I followed the video. 

It was the double-dipping of the chicken that made the difference here.


And the chicken was crispy and tender and the breading was not too spicy. Loved it!!!

Best Damn Air Fryer Pork


Honestly, that is the name of the recipe. I found it on RecipeTeacher.com. I googled Air Fryer Bone-in Pork Chops and it was the first recipe listed. Not having a whole lot of time to read through the other recipes I dove into this one. I got home at 5:50 and had dinner on the table by 6:35.

First, preheat the air fryer to 400˚ for 5 minutes.

Next, I made the rub. 

2 tablespoons brown sugar
1 tablespoon paprika
1 ½ teaspoons salt
1 ½ teaspoon fresh ground black pepper
1 teaspoon ground mustard
½ teaspoon onion powder

I rinsed pork chops and pat dry completely with a paper towel.
  1. I rubbed the bone-in pork chops, 2 inches thick with 2 tablespoons olive oil and rubbed on the spice rub.
Into the Air Fryer for 6 minutes. After 6 minutes I flipped the chops and put them back in the air fryer for another 6 minutes. We were at 145˚ at that point.

Moist and the rub was delicious. If you don't like spice you can use any number for combinations.

Really a nice treat for a Tuesday night. Really glad I found the site  -RecipeTeacher.com
