Grilled Pork Chops and a Birthday Girl!


Perfect weather for grilled pork chops. Marinated the center cut, bone-in pork chops in a mixture of 2 tbsp. Olive oil, 1 tsp Dijon mustard, 1 tsp brown sugar, 1 tbsp soy sauce, salt, and pepper.

Some sauteed spinach and roasted potatoes.

Today is Lucy's Birthday! 13!!!! I had to make her something special for dinner. She loves air fryer salmon. I only brushed the salmon with olive oil before air frying it.

Preheat air fryer to 390˚. Place dried salmon on parchment paper. Brush with olive oil. 

Place parchment into preheated air fryer. 10 minutes. That's it. Test for doneness by sticking a fork into the thickest part of the fillet and twisting gently. It should flake easily. Remove the fish from the basket immediately or it will continue to cook.


All of the salmon was not for Lucy, but she will have a little snack over the next couple of days. I will be eating most of it as the protein in my salad for lunch. You see, it is a win win for both her and I.

Grilled Pork Chops and Zucchini Fritters



Pork. My favorite Saturday night protein. Tonight we grilled. I marinated the center cut, bone-in pork chops in a mixture of 2 tbsp. Olive oil, 1 tsp Dijon mustard, 1 tsp brown sugar, 1 tbsp soy sauce, salt, and pepper. 
They were grilled perfectly.

We had Cole's corn on the cob because you have to eat it whenever you can. It is just that good.


Then I decided to add Zucchini Fritters to the table. Easy and quick and really good. 

Simple preparation-
One zucchini, chopped pretty small and one shallot also chopped small. Mix them in a bowl with 2 eggs, 1/4 cup of flour, 1/4 Parmesan Cheese, 2 tbsp fresh chopped parsley (or you can use dried parsley), salt, and pepper. The batter should be thick enough to drop spoonfuls.

Heat vegetable oil, or whatever oil you like to use, in a large sauté pan and heat the oil. Drop the batter into the hot oil with a soup spoon. Remove the fritters when they are browned on all sides to a dish lined with paper towels. Salt them immediately after they come out of the oil.

Grilled Pork Chops, Carrot Salad and Scallion Pancakes!

Yeah that's right, Scallion Pancakes. These are one of our favorite appetizers at Zhang's. Well Zhang's need not worry because theirs are still the best but these were not that bad. There are practically none left. They were quite easy to make. And the sauce was nice, love the fresh ginger!
On to the pork. I marinated it in olive oil, sage, rosemary, thyme, salt and pepper. Nice. Perfectly grilled! Thank you Chris.

The salad. I found that recipe in Better Homes and Garden, Carrot Ribbon Salad. It was okay... Chris liked it so perhaps we will make it again.

Bourbon-Sauced Pork Chops

I knew the name of tonight's post would get your attention. When I saw the recipe in Better Homes and Garden it certainly got my attention. This was a Prize Tested Recipe from Chris Gegorek. Only one word is needed to describe the taste - Wow. The meat was so moist and the flavor of the sauce was perfect. Nice and tangy and a little spicy. The thought of this dinner puts a smile on my face! Does that sound silly? If you tasted these pork chops you would not think it was silly at all.

For sides we had grilled zucchini and grilled fingerling potatoes.

Grilled Pork Chops, 2 Beans and a BIG Salad

This is what was on the table when I walked in tonight!

Chris also grilled the pork chops that he marinated in olive oil, lemon juice, salt, pepper and fresh basil. They were wonderful!
The green beans were from my Dad's garden and the wax beans were from Jake's Farm Stand.
