How did my foodie pen pal know how much I love grits?
This month my foodie pen pal was Sarah from ProjectOnPurpose.com. She sent me a 2# bag of White Grits. I am still amazed at this. When I was little, I think it was 1967, I went to Florida with my parents and my Aunt Marie and Uncle Charlie. What a great trip. We drove and I think it took us at least 2 days to get there. I was little so time was not that important. On the way to Florida we stopped for breakfast in either Georgia or South Carolina and there was this stuff on the plate with my eggs. I asked my Dad, you remember the Ice Cream Bean story, what this white stuff was. He told me they were Grits. Well, no way was I going to eat that. I was not an adventurous eater at that age. He said to just try a taste. It was true love at first bite. I loved the texture. The flavor, I think they were dripping in butter! Ever since then if I am eating breakfast out, I look for grits on the menu. At home, I have instant grits, I know, sorry Sarah but they are so easy to prepare. But I followed the recipe on the bag and dang they are good!

Chicken Chow Mein and Homemade Egg Rolls
In my Foodie Pen Pal box was a package of Snapdragon Roasted Peanut Chow Mein Noodles. On the back was this recipe. Wow, it was very good. I stir fried cubed chicken breast in vegetable oil. The box came with a "flavor pouch." Half went in with the chicken. For vegetables I added chopped cabbage, carrots and celery. The noodles were cooked and added to the pan along with the rest of the flavor pouch and another tablespoon of oil. I garnished the dish with some chopped scallions. Yum!
Now about the Egg Rolls. Holy cow, these were excellent! I found a recipe on A Thrifty Mom blog. I left out the sausage. And yes, I fried them instead of baking. These were a big bit. I even made the Sweet and Sour sauce from the blog. Let's hope the rest of the week's dinners are this good.

What To Eat On A Rainy July Evening - A Frittatta
We were planning on Burgers on the grill, but Mother Nature was not going to cooperate. Not a problem. There is always the frittatta. Zucchini, yellow squash, onion, red and yellow pepper, fresh parsley, basil and thyme. A little salami. Eggs and Parmesan cheese. Salt and pepper. A cutting board and knife. One bowl. One pan. Not too bad for a rainy Tuesday.
