Eggplant Towers

I saw the eggplant and I bought it. Now what...
I breaded and baked it in the oven, yes fried would have tasted better.
I had prosciutto so I was thinking rollatini. But I decided to make stacks. Sauce in baking pan, eggplant slice, some ricotta (that was mixed with Parmesan and parsley), a slice of prosciutto and top with a dollop of sauce (homemade marinara, of course). Repeat stacking 3 more times. Keep building stacks until you run out of eggplant or you baking pan is full. Add additional sauce to the pan, you can never have too much sauce. Bake for 20 to 25 minutes at 350 degrees.
Just remember to serve with Italian bread!

Eggplant Stacks with Prosciutto

I was planning on making Eggplant Rollatini but the slices came out a little too thick. So we had Eggplant Stacks with Prosciutto. First I breaded and then baked the eggplant for about 25 minutes, flipping then after 10 minutes. Then I started the stack. Eggplant. Next a mixture of ricotta, Parmesan, shredded mozzarella, salt, pepper and parsley. Another slice of eggplant and little more cheese and a slice of  prosciutto. And topped it all with the last slice of eggplant. A little Marinara and cheese on top and baked for 30 minutes.

Eggplant Stacks with Proscuitto and Cheeses


This was a fun dish to make. I prepared the eggplant by baking it in the oven on an oiled tray. I first tried this after seeing it on a New York Times blog. This time I breaded the slices and it made a huge difference. The filling was simply Ricotta, Mozzarella, parsley, salt, pepper and Parmesan cheese. Added some prosciutto because... I like prosciutto. This dish was very good.

I picked up some tomatoes from my Dad's garden. I decided to freeze them. I used the procedure I had found on PickYourOwn.org. I think the outcome was good. Almost 2 pounds of tomatoes for the freezer!

And I had these bananas that were super ripe... so I googled "easy banana bread recipes." The one I found was amazing. Banana Bread from SimpleRecipes.com. So easy and fast and the smell... I can't wait for breakfast.
