Stuffed Zucchini

This is a super quick meal. First cut zucchini in half (I used 2 zucchini) and remove the seeds and core out the inside, you'll use that for the filling. Make some rice, whatever kind you like. I used Arborio. Blanch the zucchini halves. Saute chopped onion in olive oil and butter until golden. Add Ground Chicken. Brown the meat and add the zucchini that you scraped out. Saute until tender. Season with salt, pepper, parsley and oregano. Mix the filling with the rice and adjust the seasoning. Fill the zucchini boats with the filling. Top with sauce and Parmesan Cheese and bake for 20 minutes at 350 degrees. So good!
