Potato and Spinach Gnocchi with Vodka Sauce

I was so excited when I saw this recipe in the New York Times. I made the Potato and Spinach Gnocchi. They were so light and fluffy. Like biting into little clouds. The sauce was pretty quick to put together. Sauteed carrots, celery and onion. Add crushed tomato and vodka. Salt, pepper and crushed red pepper. Finish with a bit of cream. Love this type of meatless Friday dinner!
