Another easy dinner. I steamed seeded peppers prior to stuffing. I prepared the quinoa according to the package directions. I rinsed a can of black beans and added them along with some sauteed onions, and diced tomatoes to the quinoa. The filling was seasoned with cayenne pepper, and chili pepper, salt, black pepper, and a little Parmigiano cheese. There was a nice level of heat to the filling.that sauce. It was a nice addition!
