Quinoa and Black Bean Stuffed Peppers

Another easy dinner. I steamed seeded peppers prior to stuffing. I prepared the quinoa according to the package directions. I rinsed a can of black beans and added them along with some sauteed onions, and diced tomatoes to the quinoa. The filling was seasoned with cayenne pepper, and chili pepper, salt, black pepper, and a little Parmigiano cheese. There was a nice level of heat to the filling.
The peppers were filled and baked for about 20 minutes or until heated through. I did make some of that sauce. It was a nice addition!
