Shrimp Oreganata

Today I was off from work so I was able to go to the Madison Farmers Market on the Green. I was hoping the vendor, North Stonington from T.A.LK. Seafood out of Stonington had Shrimp, but I was willing to get scallops if that was all they had.

They had shrimp! Wild Shrimp for North Carolina.

I have had the recipe for Shrimp Oreganata pinned for a while. It was so good and so easy. The hardest part was cleaning the shrimp. The only thing I would change is to make more of the sauce.


I served it with rice and grilled bread. YES, I know starch and starch. There was also a side of Zucchini, The sauce was quite good. We just needed more of it.
