The temperature is rising so the grill is on. We marinated the skirt steak in Alton Brown's marinade.
The Potato Salad was from RealSimple.com with a couple of changes. I used Dijon instead of coarse-grain mustard and didn't have tarragon so I added scallions.
Now the Green Bean Salad was made the way my mom use to make it. Steam the beans and dress in olive oil, vinegar, salt and pepper and lots of oregano. It was a good as I remember it. The beans, tomatoes, potatoes and scallions were all from Jake's Farm Stand.
We opened a bottle of Cavit Teroldego 2004. Amazing flavors. Raspberry, Blackberry, Cherry!

Shrimp with Escarole and Jake is Back!
A while back I had bookmarked a recipe. White Beans with Shrimp and Escarole. Doesn't the name just sound delicious. I made the recipe but because I picked up Corn at the farm stand I left out the beans. This was a very good dinner. As for the corn....
Jake's Farm Stand is open for the season. I picked up "End" corn which is the corn that is planted at the end of the rows. Wow very sweet!
Also picked up an amazing head of green leaf lettuce, a cucumber and grape tomatoes that tasted like candy!
And for breakfast we had some visitors...

Veggie Burgers and Baked Macaroni
Yes that is an odd combination but the Baked Macaroni was in the freezer and just needed to be heated up in the microwave. Now about that Veggie burger. I found these at Costco and they are very good. Don Lee Farms Veggie Patties! If you see them at Costco they are worth trying!

The Wives of the Declaration of Independence Signers
Today we celebrated Independence Day.As I am typing this entry I hear fireworks being shot off. That got me thinking about the people who signed the Declaration of Independence. But only for a moment. I then started to think about their wives. Did anyone see John Adams on HBO. Well his wife, Abigail, ran the farm and raised the children without him being around... for a very long time. It's not like running to Philly for the weekend was a 4 hour drive. And Pat's King of Steaks wasn't even there yet!
So tonight we should raise a glass and toast and thank those women who made it possible for their husbands to stand up for what they believed in. Here is a link, The Wives of the Declaration of Independence Signers, where you can find out more about these amazing women.
Dinner... A Grilled Flat Iron Steak. I marinated it in Sweet Onion Relish, olive oil, lemon juice, salt and pepper. For sides I kept it simple. Grilled Italian Bread and a salad.
Happy 4th of July!

Burgers, Hot Dogs and Key Lime Pie!
We went to a picnic at my sister's house and almost all my nieces and nephews were there with their kids! It was great seeing everyone and spending time together.Being at my sister's house always means good food! Crackers and an Artichoke and Spinach dip and Rice Cakes and Veggies with a dip!
Then came the burgers, hot dogs, potato salad and a green salad. Best Potato Salad! And she does something to her green salad that I can not replicate at home.
And that brings us to dessert... My sister made Strawberry Shortcake! Photo... NO!
But Jeanine, my nephew Paul's wife, walked in with a Key Lime Pie! Have I ever mentioned that my two favorite pie fillings are Blueberry and Key Lime. This pie was from Michele's Pies. The bakery has won a number of awards and was on the Bobby Flay Throwdown. With those credentials I was intrigued.
The crust was good... as good as, dare I say it, my sister's! And the filling was so light it had to be low fat! Maybe!
The Great Grand Kids with my Dad - "Poppa Frank"!
And my dad brought some of his homemade Merlot wine and it was fantastic!

Niantic Lions Lobster Festival and Few Cookies...
$19 for a 1 1/2 pound lobster, corn on the cob, cole slaw and chowder! A beautiful afternoon at the shoreline.
But then....
I baked 10 dozen Chocolate Chip Cookies tonight! Gee you'd think a cookie monster or two were visiting this week!
