Minestrone Soup and a Twist on Spanikopita

Minestrone Soup, very good. But the Spanikopita was an interesting dish. I was all set to make a traditional Spanikopita but I had thawed a package of Puff Pastry instead of Phyllo dough... sigh. So I put the filling in the puff pastry and wow it was quite good. No leftovers...
