Roasted Chicken and Carrots with Olives and Lemons

Tonight we had Roasted Chicken and Carrots with Olives and Lemons. The recipe is from RealSimple.com. There is something about Roasted Chicken that I love. I think it may be the crispy skin! The olives, carrots and lemon were flavorful but I think next time I may add some cayenne pepper.

Now I do not know how many of you have cats but cooking chicken usually attracts one or two into the kitchen. After the chicken was roasted I had to leave it on the counter for a moment and leave the room. This was my solution to what could have been a bad situation...
