Zucchini and Bean Salad with Bulgar

 

The other day when I was making my grocery list I did a quick inventory of what I had in the pantry. I noticed a bag of Bulgar. I had previously put this recipe - Zucchini and Bean Salad with Bulgar on Pepperplate. Do you use Pepperplate?
The dressing, for only being olive oil and red wine vinegar, was quite good. I made the zucchini mixture yesterday so it was very flavorful by tonight.
Some Fish Eye Merlot and this was not bad for a Monday night.
