Once again Mom's recipe comes through. This time I added Ricotta Salata along with the American cheese. We ate the whole dish! It was perfectly crisp on the outside. A good Lenten meal especially when it is in the 30's outside.
This was the question that was asked by my mother every day when we spoke. We both enjoyed talking about food. She passed away in 2006. I miss someone asking that question. So this is where I will tell whomever what I am making for dinner.

This really looks delicious. I'll bet it was wonderful. We are in the middle of spring here in the Pacific Northwest, but I was raised in the Mid-West and lived there for 35 years. I know how late spring can come to your area. Have a great day...Mary
