Chicken Cutlets, Green Beans and Rice Balls

Okay so this is not a recipe from Compania but it's my mom's recipe and her mom and dad were from Compania so...
My mom made the best, yes I said it, the best chicken cutlets. The coating was so light and fluffy. Her secret - beat the egg whites separately and then add the yolks. Bread Crumbs then Egg then fry them up. So good.

The green beans were prepared by Chris. Steamed and seasoned, finished with a bit of lemon juice. They were quite good.

The Rice Balls were purchased at Pasta Avest. They could be the perfect comfort food.

Your mom's secret about the egg whites is great! That looks like one great dinner. (It's nice your husband cooks with you . . . my husband likes to watch and eat and kibutz, but not cook!)
