Toasted Quinoa Salad with Chicken & Snow Peas
Tonight's recipe is from Eating Well. The original recipe called for scallops but chicken is listed as a substitute. Seeing as the scallops were $15 a pound I opted for the chicken. We loved this recipe. Of course I forgot to get the scallions. The only other change I made was adding crushed red pepper to spice it up a bit.
