Shepherd's Pie

Simple meal to prepare. Brown onions and ground beef. Add frozen mixed vegetable. Season with salt, pepper, thyme and oregano. Top with mashed potatoes and bake for 20 minutes at 350 degrees. This time I left the skins on the potatoes. Seemed silly not to use them.

Your sister, Lenore, introduced me to your blogspot. And I'm so glad that she did! I always find inspiration here. Everything sounds -- and looks -- yummy. Love your photos as well as your narratives. The reading is as good as the recipes!

Made this for dinner tonight! Yum! Leaving the skins on the potatoes made it taste so much better I think. The only thing I did differently was add some cream cheese to the browned beef/onions and then sprinkle shredded parmesan on top before baking. It turned it into a cheeseburger shepherd's pie. Jack and Dennis both liked it. Thanks for the dinner idea. :)
