Shepherd's Pie

Simple meal to prepare. Brown onions and ground beef. Add frozen mixed vegetable. Season with salt, pepper, thyme and oregano. Top with mashed potatoes and bake for 20 minutes at 350 degrees. This time I left the skins on the potatoes. Seemed silly not to use them.

Made this for dinner tonight! Yum! Leaving the skins on the potatoes made it taste so much better I think. The only thing I did differently was add some cream cheese to the browned beef/onions and then sprinkle shredded parmesan on top before baking. It turned it into a cheeseburger shepherd's pie. Jack and Dennis both liked it. Thanks for the dinner idea. :)
